adapted from foodnetwork.com (Sara Moulton) - very tasty and filling! Two muffin halves topped with yummy crab and cheese per serving.
| 1 | pound fresh lump crab meat, picked over |
| 2 | tablespoons fresh lime juice |
| 1/4 | cup light mayonnaise |
| 2 | teaspoons Creole mustard , (or to taste) |
| 3 | multi-grain light English muffins , split |
| 1 | tablespoon butter spread (optional) |
| 6 | tablespoons freshly grated Parmesan |
- Preheat broiler.
- Put lump crab meat in a bowl but do not shred. Add 1 tablespoon lime juice and toss to combine.
- In a small bowl whisk together remaining tablespoon lime juice, mayonnaise, and mustard until smooth. Pour sauce over crab and toss to coat. Season crab mixture with salt and pepper as needed and chill, covered, 30 minutes.
- Toast English muffins to your preferred darkness and lightly butter. Fill a 1/4 cup measuring cup with crab mixture and invert onto one toasted English muffin half. Set on an ungreased baking sheet. Repeat procedure with remaining crab mixture and muffin halves. Sprinkle 1 tablespoon Parmesan over each muffin half. Broil sandwiches about 3 inches from heat until cheese is melted and golden, 1 to 4 minutes - watch closely!
- Garnish with chives and lemon wedges
