I have an entire crate of red delicious apples that I need to cook up and use somehow asap.

I'd like to make a sugar-free spread or something, however no idea where to start.

Also, looking for other 'freezable' recipes for apples...

handmade applesauce with lots of cinnamon! - really good warmed up.

never made apple butter but a recipe can't be hard to find.

You can make apple butter in a crockpot.  Fill the pot with applesauce and cook, uncovered on low for 12 hours, stirring every 2 hours at first, then more frequently to make sure the bottom isn't sticking. Watch out because as it thickens it may bubble up and spatter.  It may need longer or shorter cooking depending on how juicy the apples were.  Stir in cinnamon or apple pie spices to taste.  It should be thick and brown when you're done.  Store in jars in the refrigerator.  May be canned or frozen.

 It's easier in the crockpot than on top of the stove because with the heat under it you have to constantly stir and scrape to make sure it's not burning or forming a crust.  It's worth the trouble though.
