For me, I prefer grilling fish or chicken. When grilling either, cook until no longer pink in the middle (you'll have to cut the thickest part to check). The fish will cook really fast and will become flaky when done.   When adding these to a meal I usually will cook my chicken with some italian dressing and then when the chicken is all cooked, I'll toss it over my salad. It's pretty good.

You can really add anything you like to your chicken or fish.  To me, a white (like tilapia) is best with a little bit of lemon juice, salt and lemon pepper, grilled in a small amount of margarine.  Another healthy meal is cooking raw chicken cubes with a low-sodium soysauce and veggies for a stirfry-think green/red peppers, onions, snow peas, etc-and serve over brown rice. (you can always use the minute rice version if the regular way seems daunting).

I usually just look up recipes from allrecipes.com and enter in whatever protein I have on hand.

Also, to amp up your veggies, you can always add things like beans (garbanzo are great on salads), eat lots of leafy greens (like spinach or kale), nuts, seeds, tofu, eggs, etc.  I suggest just typing in healthy or fresh foods recipes into google and go from there. hope this helps!
