I've been having lots of extra calories lately and would like to have some good snacks or desserts. I haven't got a whole lot to work with and don't want to get too crazy, but I would like something new to try. Please post your good recipes!

May not be healthy, but i always thought berries soaked in a liquor on a scoop of vanilla ice cream looked delicious!

... Obviously the liquor isn't necessary :)

Very different, hopefully not too crazy: Strawberries drizzled with a good aged Balsamico or a balsamic reduction (fancy name for pouring balsamic in a small pot and let it boil down a bit until it's nice and thick and sweet), then put some pepper over the top.

Or watermelon salad with mint.

Apple Crisp - single serving

1 apple, sliced
1/4 cup granola
3 TBS fruit juice
1/4 tsp cinnamon

Toss the apple with the juice and cinnamon and place in a microwave safe bowl.  Top with granola. Cover with a paper towel.  Microwave on high for 2 minutes, or until the apples are soft.  Serve warm.

I take pears canned in juice and dump the whole thing in a small saucepan. Add some vanilla and Splenda brown sugar and simmer it all together. The pears come out super tender and yummy! I usually have it with some low- or non-fat vanilla yogurt.

If I am desperate for something super sweet, I will make up a box of sugar-free, fat-free jello pudding. The cheescake kind is 70 calories per serving. Throw in some sliced strawberries.... now I gotta go make some. Hope this helps!

The sugar free pie fillings are GREAT! Just add some graham crackers or fresh oatmeal or anything you like to the apple and cherry flavors (at walmart)

Also, i take fat free plain yogurt, sprinkle with a TOUCH of splenda, add some baking cocoa and throw on top some fiber one. YUM!

I have yet to try this but in my head it sounds good :)

I am going to take a banana and mush it up and add maybe 1/4 c. vanilla soymilk and possibly use a hand blender on it. Then I'm going to freeze it and when I'm ready, take it out and add about 3-4 crushed walnuts and a drizzle of chocolate syrup. It think it's about 200 calories but I have some room for it and it has all my favorite stuff!! And, other than the chocolate syrup (I didn't buy it, it just kind of appeared at my apt from a friend, otherwise it'd be sf :P) it seems to be pretty darn healthy!

 

I just rediscovered No Pudge brownies.  I made a single serving for dessert last night.  120 cals.

 Made this up...has no flour..only protein, cocoa powder unsweetened, sf chocolate pudding and very low in calories for a 1 minute microwave chocolate muffin.

 Hopefully you like it.  If you want a moister cake, add 1 tbsp sour cream or pumpkin puree to the mix.  It is wonderful!!!

Very easy - only 3 ingredients.  It will be even lower in calories if you substitute strawberries, fresh or frozen, for the cherries.

Cherries in the Snow

 1 food cake

2 cups cool whip free

1 pound cherries (or one can pitted cherries)

  1. Trim off the brown edges and cut the cake in cubes

  2. Pit the cherries, or use pitted canned cherries

  3. Layer cake, cool whip and cherries in a glass trifle bowl, finishing with cherries.

  4. Chill and serve

Hey if you are like me and swimming in zucchini, you can make a mock apple pie.  The Recipe is on Cooks.com.  Search Mock Apple Pie , will bring you right to it. Hope this is helpful.  It TASTES JUST LIKE APPLE PIE. NO ONE I COOKED THIS FOR KNEW THE DIFFERENCE!

It's a very light, airy white cake, made with beaten egg whites.  We should post a recipe for you.

I usually just buy one from the bakery.

I like to mix one vanilla dannon light and fit yogurt, one serving of fiber one and one pouch of nature valley apple chips together. or you could make a parfait with all that. really filling and olny 170 cal. I also make my own apple sauce. you need 6 medium apples, 2 tablespoons brown sugar, one cup cider, 1/2 teaspoon cinnamon. peel, core and cut apple into small slices. Put apples and other indregients in pot on stove on medium heat. cook with cover slighty off so some steam can come out. cooke for about ten minutes or until the apples are cooked all the way through. put in a blender and blen to desired consitancy. store in fridge with a cover. Make sure you let it cool WITHOUT a cover on before you put the cover on to store otherwise the heat gets trapped and casue icky bacteria to form!
What is a no pudge brownie???
i loooove to cube about 1/2 of a sweet potato (1 cup) place in microwave steamer (or in a bowl with another on top w/ little space to vent if you dont have a steamer) with a 1/2 tsp nut meg, 1/2 tsp cinnamon and a little water.  Cook about 6 minutes on high and scoop potatoes on to plate w/o water.  sprinkle a pack of equal/splenda on top.  sooo yummy. 

A great 2 sweet snack I eat when I want ice cream is:

1. 1/2 C cottage cheese (I use 1% but you could use fat free)

2. spoon full of splenda

3. Sprinkle of cinnamin

4. Fat free ready whip, add as much as you need to get the sweet, creamy flavor

the other is the same but with fruit, I've found fresh or frozen berries work best.

I enjoy frozen grapes.  Just take off some and pop them in a the freezer and they are a nice treat. 

I just tried the Diet Coke Cake the other day and it was surprisingly really good.  Just take a box of cake mix....I used a reduced sugar devils food.  Take a can of diet soda...I used Cherry Coke Zero mix together and bake aproximately 5 minutes shy of the box recommendations.  I have been eating it plain but it would be good with a dollop of cool whip.
