Does anyone have any CHEAP low cal crock pot recipes? I have bought those "crok pot all in 1 bags" and they are cheap ($5) and easy because every thing you need is in one bag....but they are not as good for you as I would like.
The crock pot is working great for me in "single parent life" so I would like to use it as often as I can.....as long as the kids and I don't get "stewed out"

I have an entire Recipe Book.. Fix it and Forget It Lightly :) It's full of all sorts of good, healthier, recipes to make in the Crockpot :)
Throw in a whole chicken spiced up with about 1/4 cup water, or add enough liquid +1/2 cup water and throw in uncooked white rice with it, about 4 hrs on high or 8 on low will do ya...
I hear you can throw in the ingredients for a marinara sauce too...
I put in roasts, shred them up after the cooking time, add bbq sauce and put on bread!

You can do a whole chicken in the crockpot. The most famous recipe is Sticky Chicken. Rub a whole chicken with spice rub and put it in a plastic bag overnight. In the morning put it into the crockpot with a quartered onion and tuck some garlic inside. Don't add any liquid. Cook on low for 8 to 10 hours. It comes out falling off the bone tender and there's a lot of juices to make a sauce.
For a lower fat version, remove the skin from the chicken before you rub on the spices.
The leftovers make really good barbeque sandwiches with the additon of some BBQ sauce.
I also do what I call Chicken in the Pot. A chicken, cut up carrots, celery, onions, potatoes and fresh parsley. Cover with water or chicken broth and cook on low for 8 hours or more. Serve the broth as soup and the chicken and veggies as the main meal.

Enjoy it :) I just brought in, I think, the Beef Goulash today :) On Brown Rice instead of the Mashed potatoes they suggest :)
Chicken, i put a can of cream of chicken soup and a can of water in with the chicken. or two cans of each if you're cooking lots. the chicken is really moist and you can cook some rice and put a bit of the soup on and its really good =] its also good with pork.

Dump into the crockpot - cans of drained beans (pinto, kidney, black etc), a chopped onion, a few minced cloves of garlic, dry brown rice, some sauce and 2 cups of liquid for each cup of rice. cook on low for 8 hours.
Variations - Mexican use salsa and add peppers and chili powder, Italian use white kidney beans, marinara sauce and add oregano and top with grated cheese when you serve it. Cajun, add tomatoes, cajun seasoning, peppers and celery & maybe some okra. Oriental use adzuki beans & add soy or hoisin sauce to taste, serve with snow peas and water chestnuts.

I personally do not have any crockpot recipies that I can give you but there is a website called allrecipes.com that has really good crockpot recipes that I have used in the past and they have a section that is just low fat and vegetarian etc. You may want to check that out. I use my crock a lot as well and I use recipies from this sight all the time and just put them in the recipe analyzer before I make them if they do not have the calories at the bottom
