Crock Pot Recipes

Anyone have any good crockpot recipes? I love being able to get everything ready the night before and have dinner all taken care of when I get home from work the next day.

I happen to really like pork tenderloin and it's extremely low in fat and calories, so I'll throw one or two in the crock pot with either some BBQ sauce or teriyaki sauce.  I always end up with enough for several meals.  I put the leftovers (after I weigh each portion) into those twist-top ZipLoc containers, then in the freezer.  I also cook rump roast that way because it's an extremely lean cut of beef and a little tougher, and preparing it in the crock pot makes it practically fall apart.  I'll add an envelope of onion soup mix and a can of cream of mushroom soup and end up with a really nice gravy.  Now, this last one was before I started dieting, so I wouldn't add the cream soup now.  Anyway, just a couple of ideas.  You could do chicken the same way, either with BBQ sauce or the teriyaki.  You could also make chili in your crock pot.  And, hey, if you Google crock pot recipes, you'll find a ton of them.  Good luck!

I make a really delicious and healthy beef barley soup in the crock pot.

1 lb beef cubes

1 large can of reduced sodium Beef Broth

couple of celery stalks and carrots chopped

1/2 onion chopped

1 cup pearl Barley

2 cups frozen peas (i like peas ;)

 

add everything into the crock pot and set on high for 4-6 hours!

easy and sticks to your ribs during the chillier months..

you could also sub out the beef for another meat or omit the meat altogether and use vegetable broth to make it vegetarian!

Now, I'm not a cook, Nicole, so I'm going to ask a really dumb question.  Could I substitute TWO cups of the barley in lieu of the peas (I hate peas Laughing ).  This sounds like something I'd like to try make.  Thanks much.

I wouldn't add more barley because it would get too thick (think of the barley like rice..you'd have to add more stock or water) and the one cup of barley puffs up a lot!  If you're not into peas (its one of those vegetables that people either seem to love or hate ;) I would just sub another vegetable that you like or just leave them out completely!

If you just type "crock pot recipes" or "slow cooker recipes" into google you will get many, many, many websites with 1000's of crock pot recipes.

I would recommend going to www.eatingwell.com and searching there as they provide all the nutritional info for all of their recipes. :)

pork or kielbasa with sauerkraut!!

32 oz pkg sauerkraut, rinsed

1 pkg (14-16oz) of kielbasa, cut into 1-2" sections

1 onion, chopped

2 apples, sliced or chopped

1/2 cup apple cider or apple juice

1/2 cup water

1/4 cup brown sugar

 

Mix meat, kraut, apple and onion in pot.

Mix juice, water and sugar.  Pour over mixture in pot.

Set on high 6 hrs.

I made this the other day.  I omitted the sugar cuz I like my kraut sour.  I also used a cup of water just to make sure it didn't dry out....I had plenty of liquid in there when I got home, so 1/2 cup should be fine.

This recipe makes me wish I liked sauerkraut.  Sounds like a great Fall recipe.  My mom and aunt make pork and sauerkraut every New Year's Day.  I believe it's a German tradition.  I'm going to tell her about this.  Laughing

Yes, this is best with mashed potatoes.  Really it's great with potatoes of any style.  It definitely complements some sort of starch.  Also, you can replace the kielbasa with pork chops (although you need to brown off the pork first).

Another note: I did not peel my apples.  I wanted to keep some of the fiber and the color.  You may peel the apples if you like.
