Crock Pot Stuffed Peppers Recipe

Makes 6 servings


You can substitute 2 cans of tomato soup diluted with some water or 2 cups of salsa in place of the tomato sauce/water combo.

Ingredients
6 medium green peppers, (select tall rather than wide ones, any color)
1 pound ground turkey
1/3 cup brown rice, uncooked
1 onion, grated
1 salt and pepper
1 tsp oregano
1 tsp parsley
1 clove garlic
1 tsp basil
1 tsp chili powder
1 cup tomato sauce
1 cup water
Directions
  1. Cut the top off and remove seeds from peppers. Combine beef, rice, onion and seasonings.

  2. Stuff each pepper about 2/3 full. Stand the peppers side-by-side in the slow cooker.

  3. Combine tomato sauce and water and pour over the peppers.

  4. Cook on LOW for 6-8 hours. If desired, heat more sauce to serve with the peppers.
