Crunchy Chocolate Chip Fiber Bars Recipe

Makes 12 servings


Fiber one cereal is crunchy, low cal and yummy. I use mini chocolate chips.

Ingredients
3 cups fiber one
2 tbsp Peanut butter
5 egg whites
1/3 cup chocolate chips
1/2 cup slivered almonds
1/2 cup craisins
1/3 cup sugar free marmalade
1/2 cup splenda
1/2 tsp cream of tartar
Directions
  1. Preheat oven 325'

  2. Grease 13x9 pan with Pam cooking spray

  3. Melt SF Marmalade and peanut butter in microwave safe dish *this should only take a few seconds*

  4. Mix in almonds, craisins, chocolate chips and fiber one

  5. Add peanut butter marmalade mixture and coat the fiber one mixture well.

  6. Beat egg whites slowly adding cream of tartar and splenda until very stiff

  7. fold together fiber one mixture and egg whites

  8. Press mixture lightly into greased pan

  9. bake for 30 minutes.

  10. cool and cut in equal pcs and store in air tight container
