Crunchy Pumpkin Muffins

I made these today. I was looking for something quick to eat when I don't have time to prepare a snack.

Crunchy Pumpkin Muffins
12 servings

1 cup Old Fashioned Oats
1 cup Pumpkin - Canned
1 cup Fiber One Cereal or All Bran w/extra Fiber
1 cup Egg Beaters 
1/2 cup Craisins, Sweetened Dried Cranberries 
1/2 cup  Almonds, Sliced 
1 scoop Whey Protein Plain  (optional)
1 medium apple chopped in chunks
1 tsp Baking Powder
1 tsp vanilla
1/4 tsp nutmeg
1/4 tsp mace 
1 tsp cinammon

Preheat oven 350'
Mix all ingredients well
Spray muffin cups/tins or use liners.
Put a scant 1/3 cup in each muffin cup.
Cook for 30 minutes.

Calories 101 each muffin
Calories from Fat 20 - Total Fat 2.2g -Cholesterol 2mg - Sodium 126mg -Total Carbohydrates 17.0g - Dietary Fiber 4.4g  - Protein 6.2g

I've tagged this one!  I like pumpkin and I like oats and all the other ingredients, so how can I go wrong?  Yum!

this is exactly the recipe i was looking for the other day and i couldnt find it!  I wanted a pumpkin muffin with oats and apples and here it is.  thanks.  i will be trying it tomorrow
This looks good! Thanks! Half the time I try these darn recipes there's always a few steps and/or ingredients MISSING! Heck, not HALF the time, but MOST of the time!

They are a good size. They don't rise as much as flour based muffins and are very dense and moist.
i'm trying these today - i altered the recipe a little to raise the fiber.  i'll let you know how they turned out - but the batter smells fantastic!

these were wonderful in muffin top tins since they are so dense.  raised beautifually and just enough to make a nice muffin top.  I used the excess batter, altered it a bit and made bars with it too.  I loved this recipe.
Oh cool I'm so glad people are playing with the recipe. That's the best part of cooking. You can be creative with things.

Cream cheese!  I bet that's good.  I have a block of cream cheese in the freezer that needs to be thawed and used before too long.
