Crustless Pumpkin Pie with brown sugar oatmeal topping

I bought some pie pumpkins this fall. I baked them til tender, then I pureed them and froze. I made 2 pumpkin pies this weekend. I had more batter than pie shells so I just baked the extra filling in a glass bowl. It was absolutely delicious. It was like eating warm pudding.

Next time I do that I'll use the fat free evaporated milk and make more of these in flan type bowls.

moonikins:  Do you have the recipe for your pumpkin batter to make the flans. I would really appreciate it.

I would stick with 2% condensed milk. Not sure about other brands, but Nestle fat free and 2% have same amount of of calories, but fat free has more sugar to replace fat.
