Recipe Ingredients for Cucumber KimChi

1 large cucumber
1/4 cup salt
2 tbsp sesame oil
1/4 cup dried red pepper

Recipe Directions for Cucumber KimChi

  1. slice cucumber into large 1 inch slices and quarter the slices.

  2. add salt to the slices, let sit for approximately 10 minutes.

  3. add remainder of the ingredients and mix well.

  4. Let sit in refrigerator for at least one hour to chill.
