crisp and refreshing salad for those days that are hot! Very tasty, low in fat and calories. I always feel good about eating this.
| 2 | cucumbers, sliced |
| 1/2 | tsp dill weed, dried |
| 2 | tbsp sugar |
| 1/2 | cup cider vinegar |
| 3/4 | cup water |
Place cucumbers in a bowl with a 1 tsp of salt and cover with water. Place a plate and a heavy object, like a spaghetti sauce jar, to weight the plate down and help the cukes absorb the salt. Let stand for about an hour. Drain water and squeeze the cukes to get most of the seeds out. Mix the last four ingredients in a large bowl and add cucumbers. I play back and forth with the vinegar ans sugar until it is tart enough but still has a hint of sweet to tame the vinegar. It's best if the flavors have another hour or so to get acquainted. Best if made the night before serving.
