Cupcake Box Mix - Eggless
If i wanted to make cupcakes from a box mix, what could I replace the eggs with??
(mum doesn't eat eggs but eats all other dairy)
I'm allergic to eggs, so I use Ener-G Egg Replacer but it's not that easy to find. If I don't have the egg replacer, I like to use gelatin, there's other things to use though. check out this link.

EDIT: If you use applesause or banana please be aware that it may change the flavor a bit. That's why I like to use the gelatin.
Applesauce is a good substitute :)
(for each egg -> 1/3 cup applesauce)
Try this eggless chocloate cake. Bake it in cupcake pans for a shorter amount of time. It's easy to mix.
My son is also allergic to eggs. I've heard of applesauce to replace oil or butter, but not eggs. I use ground up flaxseed and water. One tablespoon of ground flaxseed to 2 tablespoons of water. Put in pan on low heat until it's a bit thicker(this does not take long) and add to recipe. It works wonderfully!!

I cant remember where I saw it but you can replace the egg with a soda...or if dieting a diet soda.
I sometimes use the Ener G egg replacer. You can get it at health food stores. I keep it around because it is shelf stable, easy to use and low calorie. Great product.
You can replace all the wet ingredients with one diet soda. One box mix and one diet soda and that's all...I swear. I like to use chocolate cake mix and diet root beer or one box yellow cake mix and one diet lemon lime soda.
I use pure canned pumpkin. works really well
I've used canned pumpkin or white pinto beans...puree with a cup of water and you're set.
I've done chocolate, spice, and carrot cake muffins with 1 box of cake mix, 1 small (I think it's about 15 oz) can of pumpkin (not the pie filling, just pumpkin) and 1/2 can water. You can bake it in muffin tins or as a 9x9 cake per the package directions. My kids (who are notoriously picky) love it.
I like to throw a big handful of chocolate chips into the chocolate mix for them for a treat. It's a little more dense, but oh-so-moist!
Lekililina's recipe is good. I found it not long ago and now I use it all the time. It actually makes the box mix cake MORE moist than oil/eggs do. Everyone I've served them to LOVES them. I think applesauce makes it more chewy and flat...
