mmm.. diet coke cake.. a dieters best friend! and it's so yummy
here's what you do
take 1 cake mix (any flavor)
take 1 can diet pop (a flavor to match the cake flavor or compliment it) the kind with splenda in it usually tastes better because it doesn't break down in heat
mix the 2 ingredients together and bake according to the package directions. you can make them into cupcakes or a cake.. top with some fat free cool whip and you've got an AWESOME dessert! :)
the calorie content varies based on the cake mix.. but use the information for dry mix on the package (not the info for the made cake)

have a happy birthday! :)
I just made this cake yesterday, and OMG was it good!! Tasted just like the regular thing but 70 calories less!!!!!!!
Yep! Just diet coke! Or diet anything else. If you're using white cake, use diet 7-Up. You'll LOVE it!
I used yellow cake mix, and although the color came out slightly different (more like a light brown) it was still great tasting! Now, I just have to keep myself from eating the whole thing this week!
Hahaha, totally. I'm running low on cupcakes. :-\ I should probably make some more. I used german chocolate cake mix and diet cream soda in mine. :D
Out of curiosity...do you put any sort of icing on them or are they good plain? I am anxious to try these. I never thought I would be able to eat cake!
Never mind...just read about the fat free cool whip! Thanks!
It might sound kind of weird, but my favorite variation on these is with strawberry cake mix and Fresca. :)
Mmmmmm....lovinlife I'm going to have to try that. I only have 2 cupcakes left! I better make another batch, pronto!!!
I usually put whipped cream or Cool Whip on top, but when I have calories to spare, I take one block of Hershey's Special Dark chocolate, break it in half, stick half in the middle of the cupcake, and put half on top, and then put it in the microwave. Then the chocolate gets all melty and yummy and I spread it around on top, but I have some in there when I bite into it, too.
That is a TOTAL guilty pleasure. Drool!

I just finished reading about the diet coke cake! I am on my way out the door right now to get a cake mix and a diet drink!!

The dark chocolate in the cupcake sounds so good! What a cool idea. I could even do that and no cool whip at all and be in heaven.

I made the cake...and as i type it is cooling! My questions...sice i made a cake an not cupcaes, what would be the serving size cand calorie count?
P.S. I'm mathmatically challenged, so the "grams" doesn't compute with me.

just cut it into slices about the same size as a cupcake.
The cake mix makes 2 dozen cupcakes. That's 24 servings. So cut the cake into 24 pieces. :)
Thanks! Didnt even think of that one.... (blushing)
Hi, i just have a question about this recipe!
All the cake mix here (australia) has sugar already in it i think!
Or is there some cake mix that doesnt already have sugar?
And the diet soft drink is like, the sugar substitute right?
im so confused!
