Curried Cashew Couscous Recipe
From Vegan Express with some variations.
| 1 | cup couscous |
| 1 | vegetable bouillon cube |
| 8 | oz peas |
| 2 | tbsp peanut oil |
| 1/2 | cup cashews |
| 1 | tsp curry powder |
| 1 | tsp fresh ginger, minced |
| 1/2 | tsp turmeric |
| 1/2 | cup raisins |
| 2 | scallions, thinly sliced |
| 1 | salt, to taste |
| 1 | pepper, to taste |
- Combine the couscous with 2 cups of water and the bouillon cube in a large wok or skillet. Bring to a simmer, then cover, and let stand off the heat for 5-10 minutes, or until the water is absorbed.
- Add the remaining ingredients, stir together well, then cook, stirring frequently, for 2-3 minutes longer.
