Does anyone have one that actually tastes good?  I've found some recipes and mixes to order online but I'm skeptical and would prefer to try one that someone could recommend.  I'd like to use it to make mac & cheese or to use on bean burritos.

Unfortunately, I do not have a recipe for you.  However, I have advice.  DO NOT buy "chreese"/road's end products.  http://www.chreese.com/ ; SOOO gross!!

 

but do let me know if you find something that is delicious, because i would love a good vegan "cheese" sauce. Smile

i have heard good things about teese, but i havent tried it! apparently it melts very nicely.
i'm sorry - cheese should never be in ironic quotes.

I concur, chreese is some nasty shtuff!

Whenever I've made cheezy sauce for nachos, scalloped potatoes, etc, I usually just dump some nutri yeast in some soy or almond milk [plain, UNSWEETENED] in a pan on the stove and heat over medium heat, then whisk in various spices, liquid aminos, mustard, cayenne, whatever and sometimes a thickener such as arrowroot or corn starch until it reaches a nice consistency and tastes good. Nothing too scientific about it! :P

pgeorgian i agree, but sadly am lactose intolerant and REALLY miss cheese.

I've read somewhere that lactose intolerant people are able to eat cheese made from sources other than cow's milk, like goat cheese.  I also read that the harder and more aged the cheese it, the lower the lactose content, and those might be more acceptable.

I've tried alot of different alternatives to no avail.  Certain types of cheeses and dairy products are worse than others, but they all have an adverse effect on me.

i've tried the mac and cheese recipe and i really like it. but not the nacho one.
also my favorite store bought soy cheese is 'follow your heart' nacho flavor but they also have a really good cheddar flavor too.

i know. i pretty much use that site for everything i need to make.

This isn't a recipe but it may help. Look in your grocery store where the individually wrapped & sliced american cheese is. I found Smart Beat American Flavor. Fat free, cholesterol free, lactose free, non-dairy cheese. The ingredient list doesn't list any animal products. It's high in protein with 180mg sodium/slice.

This lacks some flavor on a cold sandwich but melts and fills out hot foods like a regular American cheese. I always add a slice or two to an omelet. It almost tastes real and the texture is great.

For mac & cheese, I make 1-cup of pasta, drain all or most of the water, drop in 2 slices of cheese, cover and wait till it melts.. about 2 minutes. Just stir it up and season any way you want. The only thing I've found that seems to break the cheese is Cholula hot sauce. It just makes it adhere to everything a little stronger but remains well blended.
