Do dairy products retain calcium when cooked?

Answer

The calcium in dairy products and other foods is not impacted by cooking, and neither is vitamin D, a nutrient added to dairy products that enhances calcium’s absorption.  Oxalic acid found in dark leafy greens, rhubarb, soy and cocoa, and phosphoric acid in dark sodas, can decrease calcium absorption a bit.  Calcium is best absorbed from dairy products.
