salad:1 can of chickpeas - drained.
2 tomatoes - chopped.
1 cucumber - de-seeded and quatered.
1/2 red onion - chopped.
1 bunch cilantro - chopped.
dressing:3 tblspoons extra virgin olive oil.
1 1/2 teaspoon curry powder.
2 teaspoons minced garlic.
1/2 cup lemon juice.
salt and pepper.
combine dressing ingredients together and stir, drizzle over salad and toss so that everything is coated.
*I like to eat this with two mini whole wheat pitas, toasted.

there is about 200 cals per serving, and it makes 6 servings!!
