This is a delicious take on traditional banana bread and can definitely replace cake at special occasions! The recipe analyzer doesn't provide information for sugar replacements beyond Splenda. For this recipe to be sugar free, I used: cup Brown Sugar Twin cup Granular Sugar Twin These are calorie free sweeteners and shouldn't effect the caloric content, but they mess with the calculator, so I've included them in this portion and not in the ingredient list.

Recipe Ingredients for Delicious Moist Banana Applesauce Cake (Low cal, Sugar free, and Fat free!)

2 eggs
2 medium bananas
1 c applesauce
1/2 c nonfat yogurt
2 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1 c flour
1/4 c oatmeal
4 tbsp cornstarch, divided
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt

Recipe Directions for Delicious Moist Banana Applesauce Cake (Low cal, Sugar free, and Fat free!)

  1. Preheat oven to 375F

  2. Combine sugars and eggs in bowl, and beat until smooth. Next add bananas, applesauce, yogurt and vanilla, and again beat until smooth.

  3. Add cinnamon, nutmeg, flour, oatmeal, baking powder, soda, and 2 tbsp of cornstarch, and again beat until smooth. Mixture should be somewhat thick.

  4. Spray a 9"x13" cake pan with nonstick spray. Use remaining 2 tbsp cornstarch (or more if needed) to coat the entire inner surface of the pan. One technique is to first evenly spread the nonstick spray with a pastry brush, and then use the same brush to spread the cornstarch.

  5. Pour batter into cake pan. Gently turn and tilt the pan to evenly spread the batter.

  6. Bake for 50 ? 60 minutes, until the top springs back when touched and a toothpick inserted in the middle comes out mostly clean. Some batter will always stick to the toothpick, so use discretion when ascertaining doneness.
