Delicious Skillet Chicken Recipe

The name says it all! Serving size is 1/4 entire recipe.

Ingredients
1 tbsp Olive Oil
1 Carrot - chopped
1 cup Onion - chopped
1 pound Boneless skinless chicken breast - cubed
14 1/2 Tomatoes - Diced - Can
1/2 tsp. Basil
1/2 tsp. Oregano
1 clove garlic
4 tsp. grated parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
Directions
  1. Heat oil in skillet.

  2. saute vegetables until softened (about 10 minutes).

  3. Add chicken; cook until no longer pink.

  4. Stir in remaining ingredients and cover.

  5. Simmer until flavors blend (about 10 minutes)

  6. Serve over pasta (extra calories!) or with green salad or steamed vegetables.
