I made these last night and they were to die for. Took a few recipes I found on CC and combined them into my own - so good I wanted to share with the world!

Yeah, these are good. I make them all the time in the summer, and I stuff them with tuna or sometimes chicken salad.  Little sprinkle of shredded cheese on top and you are good to go.

on edit: mmmm - I think this might be good with quinoa in place of the couscous as well (I already have quinoa in my pantry)....

I've tagged your recipe.  I bet it would be good with any cooked whole grain.  You could vary the texture by using wheat berries or barley.  The calories would be about the same, and the variety is infinite.  It's a versatile recipe, very nicely written.

couscous is really a kind of pasta, but it's itty itty bitty so it might remind you of rice.  it's gosh darn yummy, and absorbs whatever kind of flavor you add to it.

Yummmmmm.  That really sounds good and I have an abundance of tomatoes right now.  Couscous in the pantry too!  Thanks!

Could I possibly replace the tomatos with peppers and maked stuffed peppers this way too??
