Delicious Tofu Meatloaf! 130 calories per serving!
Hey everyone! I made dinner tonight - Tofu Meatloaf... it was great! You gotta try it:
For meatloaf:
14 oz extra firm tofu
1/2 chopped onion
1/4 cup cooked brown rice
1/2 cup bran cereal
1 chopped celery stalk
1/2 diced green pepper
1/4 cup chopped mushroom
1 chopped medium carrot
sage, cumin, nutmeg, garlic powder, black pepper, basil
1/4 cup soy sauce
1/8 cup ketchup
1 tbsp dijon mustard
For topping sauce:
1 tbsp mustard
1 tbsp ketchup
3 tbsp Apple Cidar Vinegar
2 packets Splenda
It makes 6 servings:

I served this with steamed vegetables and instant mashed potatoes as side dishes. (mashed potatoes prepared with 1 tbsp of Smart Balance instead of 3 of butter, and 1/2 cup water/1/4 cup skim milk instead of 3/4 cup whole milk)
Light, delicious, and filling meal. Under 300 calories.

1/8 cup ketchup
1 tbsp dijon mustard
For topping sauce:
1 tbsp mustard
1 tbsp ketchup
3 tbsp Apple Cidar Vinegar
2 packets Splenda
- Preheat oven to 350F and oil a bread pan or small lasagne pan.
- In a sauce pan, cook the tofu (pre-drained and squeezed). I added browning sauce, soy sauce, and spices, but it's optional. It ends up looking like ground beef.
- Mix the cooked tofu all of the goodies together and press into prepared pan.
- Bake for 20 minutes or until brown on the top.
- Heat the sauce ingredients on the stove, pour on top of loaf, and let it cook another couple minutes.
- Slice and serve warm.

OK, I'm convinced to give tofu a try. I don't even know what tofu looks like. What section of the grocerty store do you find it? Does it come in different forms?
It'll be in a refrigerated section in a small, rectangular plastic package. Usually comes packed in water. Make sure to get extra firm, not soft, for this recipe!

I'm shopping next Tuesday radbird. I'm out of tofu and green peppers, and I'm low on brown rice, but I always have everything else on hand. It's on next week's menu. I'm just wondering if it freezes well. I like to have slices of meatloaf in the freezer for a quick thaw & heat meal
I'm definitely trying this but without the Splenda :) I've always wanted to try a tofu meatloaf. I'm actually building myself a little recipe arsenal (all the ones that come out good I type up and label and put in sections of a 3-ring binder. Yes, I'm anal) and I needed a "meatless loaf" recipe, so thanks!

Made it tonight. Fantastic!! You nailed the flavor. The only thing I would do different is saute the vegetables a little bit to get some of the moisture out because my loaf turned out a little crumbly. But it was delicious ... with mashed potatoes and the punk rock chickpea gravy from Vegan with a Vengeance. We're putting it on the menu. ;-)
