Hello everyone,

I thought this would be a great place for everyone to have a list of all of our favorite recipes at a glance. I know that even those who eat meat love an occasional veg*n dish or need to prepare a veggie dish in a pinch for a friend.

If you would please specify in the title if the recipe is Vegetarian or Vegan, it may save the readers some time, but I've found most recipes are fairly easy to convert, and would be happy to offer some suggestions in how to do so as well.

CHOCOLATE CHIP COOKIES -- a m a z i n g

     2.5 cups whole wheat pastry flour

     1/2 tbsp baking soda

     1 tsp sea salt

     1.5 cups evaporated cane sugar

     1.25 cups refined coconut oil

     1/4 cup ice water

     1 tbsp molasses

     1/2 tbsp pure vanilla extract

     10-12 oz. package of vegan chocolate chips

 

1) Preheat oven to 375* & line baking sheets with parchment.

2) In a medium bowl, sift together the flour, baking soda, & salt; set aside.

3) In a large bowl, with a mixer, combine the sugar & coconut oil on medium-high speed until creamy (~ 3 minutes). Add the water, molasses, & vanilla; mix until well combined.

4) Put the mixer on low speed. Add the flour mixture in 3 additions, mixing each addition until almost fully incorporated. Add the chocolate chips. Mix until well combined.

5) Arrange 2 tbsp sized balls of cookie dough 2" apart on the prepared baking sheets.

6) Bake @ 375* for 13-15 minutes, until the edges are slightly browned.

7) Cool on a rack before you eat them. Wink

Vegan Lazy Man's Lasagna:
  • 1 pkg of your favorite short pasta such as ziti or elbows 
  • Your favorite jar sauce or homemade marinara
  • 1 lb extra firm tofu
  • Large bag of fresh baby spinach
  • 1/2-1 cup fresh sliced mushrooms
  • 1/2 red bell pepper finely chopped
  • 2 chopped plum tomatoes (if you like your sauce chunky)
  • Extra virgin olive oil to taste
  • 2-3 Tbsp nutritional yeast flakes or vegan parmesan (optional)
  • 1 tsp fresh basil
  • 2-3 cloves garlic crushed
  • Splash of lemon juice  
  • Fresh parsley or vegan parmesan for garnish (optional)
  • Shredded or sliced vegan soy/rice cheese to top (optional)
  • Sea salt and pepper to season
Directions:
  1. Prepare and set out ingredients 
  2. Mash tofu, lemon juice, sea salt, nutritional yeast/veg parm and soy milk until ricotta like consistency
  3. Dice tomatoes & red peppers, slice mushrooms and rinse spinach. Saute in a saucepan with minced garlic and extra virgin olive oil
  4. When cooked through, fold into tofu mixture by hand with a spatula just until mixed thoroughly.
  5. Boil pasta until cooked through and rinse with cool water to stop cooking 
  6. Toss pasta in a large bowl with your favorite marinara sauce
  7. Add tofu ricotta and vegetable mixture and either garnish and serve hot or place ingredients in a pan and top with vegan cheese of your choice and bake until cheese is melty/bubbly
  8. Top with a little fresh chopped parsley or cilantro, your favorite sauce and vegan parmesan cheese as desired
  9. Enjoy!

OMG VEGAN LASAGNA!!!! You cannot imagine how much I miss this and MY FETTUCINI W/ALFREDO SAUCE!! I was soooo tempted to buy alredo sauce not to long ago! I've been vegan for about three months and I do miss the pasta. I can't thank you enough for this one!!!

Its brilliant if you are having trouble sleeping as the lettuce is a natural narcotic!

Thank you everyone for the great recipes. I myself am not vegitarian, but my nephew has SEVERE food allergies and needs an almost vegan diet and can't be around other foods. We are a close family who enjoys meals and celebrations and I just wanted to say thank you for taking the time to share your recipes I will definitely be sharing them with my family.

Oven Baked Seitan:

For some reason I hate boiling seitan and find this much easier.  It's great sliced up and put on pizza. 

2 cups vital wheat gluten
1/4 cup nutritional yeast
2-3 tbsp flour
1 cup cold veggi broth
1/2 cup soy sauce
1 tbsp katsup
1 tbsp EVOO
Seasoning to taste (I like garlic, pepper, coriander, and spike, but my friend uses a lot of cumin, it all depends on what flavor you want your seitan to have).

Directions:

Mix dry items in one bowl and wet items in another bowl.  Add wet to dry, mix, and kneed dough for 3-5 mins (it will be elastic in texture, if it's too sticky and another tbsp of flour).  Shape into a tube -- like salomi -- and double wrap in foil, twisting the ends of the foil tight to keep the seitan inside.  Bake in a preheated oven @ 325 degrees for 1 hr 15 mins. 

We've been whipping up a white bean spread to serve with crusty whole grain breads at dinner time...or to dip fresh veggies in...It's great when there's unexpected company...there's usually White/Cannelini Beans and onions on hand...

A can of Cannelini Beans, A medium sweet onion, EV Olive Oil, A splash of white wine, fresh lemon juice, minced garlic, salt and pepper to taste and Crusty bread, crackers or vegetable sticks for dipping.

Sautee the onions in the Olive Oil and garlic with some sea salt and fresh cracked pepper until slightly translucent and add the splash of white wine and cook for a few additional minutes. Add the sauteed onions into a food processor with the Canellini beans, squeeze some fresh lemon on top and add salt and pepper to taste. Blend and add a small amount of EV Olive Oil until the spread/dip is the consistency you want it to be.

Serve it with your accompaniments and enjoy! xo

 

Thank you so much for this idea - what a win!  Smile  I really struggle to find good vegetarian/ vegan recipes.  This is excellent!

 

Recipe for chickpea curry.  Delicious.  Keep a couple cans of chickpeas in the house and it only takes about 30 minutes (you can cut the simmer time a bit.)  It will be done before the brown rice is!

This is one of those "I'm in a hurry what can I make?" recipes that came from WW; to make 3 minute chili take a can of black beans, a can of tomatoes with peppers and a can of southwestern-style corn with red and green and peppers.  Mix in a large pot and heat through and you're good to go.  I think it's vegan?  If you're not, it's also good with some sour cream and cilantro garnish. 

This is a recipe for a fresh kale salad. The kale is raw, so you're getting all kinds of good and delicious nutrients! This salad really grows on you, too. I made it for my grandmother (who despises kale!) and she gave it a try. She liked it okay at first, but by day 3, she decided to buy more kale and make it again! The longer it marinades, the tastier it gets. It can be made without the cheese for an even healthier dish.

Ingredients:

salad 2 bunches kale, 1/2 cup pine nuts, 1/2 cup feta or vegan feta, 1 cup green grapes, halved, 1 avocado, diced 
marinade 2 lemons (juiced), 5-10 cloves garlic, minced, 1/4-1/2 cup olive oil, 1 tsp agave nectar or other sweetner 

Direction:

1. Wash kale and separate leaves from stems. Tear the kale into bite-sized pieces in a large bowl (preferably with a lid).
2. In a separate bowl, whisk marinade ingredients together. Add marinade to kale and mix thoroughly. 3. Add the rest of the salad ingredients and mix again. (Or shake with the lid on!
