Delicious Whole Wheat Pancakes

These are really yummy!

1 c whole wheat flour 1/2 c wheat germ 1/2 c oats 1 tsp baking soda 1/2 tsp baking powder 1 tsp cinnamon

1 c soy milk 1/2 c vanilla nonfat yogurt 1/2 c water 1 tbsp melted butter (or oil) 1 egg 1/2 tsp vanilla 1 tbsp brown sugar or molasses or pure maple syrup

sift together dry ingredients mix together wet ingredients add wet to dry

pour 1/4 c batter on heated "Pam"-ed griddle or pan

According to my calculations, these are about 110 calories a piece. Top with fruit and yogurt and nuts. (add these calories)

So good! And two of them keeps me full for 5 hours!!

Is there any agent one could substitute for the egg to make them vegan?
Egg substitutes:

2 tbsp corn starch = 1 egg.
2 tbsp arrowroot flour = 1 egg.
2 tbsp potato starch = 1 egg.
1 heaping tbsp soy powder + 2 tbsp water = 1 egg.
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water = 1 egg.
1 banana = 1 egg in cakes.
1/4 cup applesauce = 1 egg.
Sounds delicious!

So that makes four servings?
It makes 12 pancakes. One pancake, a quarter cup of batter, is about 110 calories, I believe. (I just added up the calories of the ingredients, measured the batter, which totals 3 cups, and divided it by 12. I know it's not totally accurate, but I think it's a good estimate.)

And I vote for applesauce instead of eggs for vegan. That's what I make muffins with for my vegan friends.

Remember, the 110 is WITHOUT any bananas or blueberries or nuts or syrup or yogurt.

Krusteaz makes a mean whole wheat pancake mix now... not too high in calories as long as you use ICBINB spray and low cal syrup. Add in some turkey bacon and you have a decent weekend breakfast for the family without sacrifing your diet.
When I make pancakes I often use ground flax mixed with water as an egg substitute.  Turns out really well.  1 tbsp ground flax + 3 tbsp water = 1 egg.
