Desperate for new meal ideas
Okay. I'm living in Korea and don't have quite the selection that there is in the States/Canada. I'm basically limited to salads and tofu and rice.
Does anyone have any recipes that don't require an oven (I only have two stove top burners in my studio apartment)? The veggies that are always available here are onions, bell peppers, zucchini (not a favorite but I can stomach it sometimes), and potatoes. Now tomatoes are out. There's loads of tofu, rice and lettuce. I eat eggs so that's doable. And sometimes I'm lucky enough to get salsa before it sells out.
Please help. I'm so tired of eating the same few Korean meals.
(Also have pasta, tomato sauce, pesto on occasion available)

I'd go to a site such as recipezaar, and use the recipe sifter tool (located under the "recipes" tab). You can narrow the recipes down by including only ingredients you have available. Here's a search I did with onions, peppers, and squash (hopefully the link works!). You can expand or restrict the search from there. Good luck!

Can you get dry beans? Canned tomato? Pinto beans with diced zucchini, onion, and tomato (or if you can't get any tomato and you can find salsa that would work, too) over brown rice.... mmmm.
I'm not really a pinto bean fan. However, you reminded me of a great meal I had at a little vegan place in Harvard Square in Boston. It was brown rice, topped with pureed black beans, diced mango, tomato, onion and bell pepper and a sprinkle of shredded vegan cheese. I might have to try that again.

I think you can order non-perishable foods from amazon.com or amazon grocery or something. You should look into doing that and having soups/canned/dried foods shipped to you.
Well, shipping to Korea is incredibly expensive. There's a costco here (though selection is pretty limited and expensive as well). We've got a long weekend so I might check out some of the foreign markets and see if they've got anything decent.
