Dessert, anyone?
Of all the people on the world wide interweb I know you guys can help me with this!
My exercise buddy has recently helped me out with some mechanical problems with my car and I really would like a way to thank him for everything he's done for me. Not only has he been super mechanic but he's helping to keep me motivated!
He loves sweets and loves breads and I really want to find a GOOD low calorie dessert for him to enjoy with his family. I want him to see that he doesn't have to deprive himself of what he loves but ..... I CAN'T SEEM TO FIND ANYTHING! All of the recipes I googled sounded either gross or the nutritional facts weren't there or weren't complete.
Does anyone have any good suggestions?
I have made a few recipes from the recipe section on this site, its great it has all the nutrition info. I made the brownies with the reg. box brownie mix added no sugar applesause, egg substitute and water, I have 5 teenage boys and a hubby and none of them knew they were "diet" brownies, there are recipes to make homemade or the "quick way". Hope that helps a little

honmo, I didn't think of substituting on regular recipes. I'm afraid I'm not quite good at that yet! :-P
You'll find that clairelaine has some of the best recipe advice in the forums. She's entered a recipe for "Dr. Bird Cake" in the database that I'm very anxious to try (it sounds fabulous):

You could also go with a classic sponge cake: http://caloriecount.about.com/recipe/99016.ht ml
and then dress it up any number of ways: serve with strawberries and light whipped cream for strawberry shortcake; cut into thirds horizontally and layer with a light chocolate or fruity mousse or pudding, then decorate with fresh fruit. I've also seen versions of this where the sponge cake was made in a jelly roll pan, mousse filling was spread on, and then rolled up jelly roll fashion for a roll cake.

I dont have anything to post right now, but I do have a trick or two up my sleeve to make some great recipies lower calorie.
One thing I often do when making cakes or loaves, is replace the oil with apple sauce. It keeps the cake moist, but not all the fat. I have even done this with brownies.
For lighter cakes, you can also omit the yolks in eggs and just use the whites. This helps make a lighter, lower cal recipie as well.
