I had a craving for key lime pie but didn't have the calories to spend.  So I made a substitute and it was really good for 102 calories.  My snack for that time was to be 100 calories, so it was just right.

I used lime curd from a jar (60 cal - yes it's rich), a tablespoon of greek style yogurt (only 7 cal) and a plain rice cake (35 cal)  Spread the tablespoon of lime (or lemon) curd on the rice cake.  Spread the tablespoon of yogurt on top.  Eat right away so it doesn't get soggy.

That sounds yummy. But what's lime curd?

I might try something similar with lime juice mixed in with vanilla yogurt. I just got a package of rice cakes and I love them.

I made a fabulous low-cal chocolate cake that I had for dessert. 130 calories per generous piece - 155 with a serving of coolwhip on top. All with no fake sugar.

I think a good low cal dessert just makes the day better and the healthy living painless.

And if you're looking for something more dessert like than a rice cake (not that you should, I'm just personally not a fan). Phyllo dough is not too shabby and two quarter sheets, stacked up for stability, and baked until crispy is 30-ish calories. (It's also great to wrap rice/veggie skillets in, just fold in two for the double layer, wrap up rice/veggies, bake until crispy, and its handy, tasty, and an extra 57 cals per 'wrap')

Sorry, phyllo is one of those weird foods that drastically helps me stay healthy, even though it's not a 'diet' food : )

 Lemon or Lime curd is like the filling for lemon meringue pie. It's quite rich and most of the calories are from egg yolks, but since the flavor is so intense you don't need much - a tablepspoon is what I used.  You can cook it from scratch or buy it in a jar, as I did. It can be found near the jams and jellies in the supermarket.   

I had bought the jar of Dickenson's Lime Curd to use in little bite size tarts for a party, but I never did make them.

Sorry, phyllo is one of those weird foods that drastically helps me stay healthy, even though it's not a 'diet' food : )

 I like phyllo too.  It's actually very light if you don't slather it in melted butter.  However, I had the rice cakes, didn't have the phyllo, and even if I did, it's too hot to turn on the oven. 

If you want to bake, did you know that 1 oz of frozen puff pastry is only 158 calories?  

I have never tried lime or lemon curd. It is now on my shopping list. Clairelaine, that sounds like a wonderful treat! Thanks!

what you should do next time is take a packette of sugar free Lime Jello mix and dissolve it into 1 cup of boiling water

then add 1 cup of plain unsweetened low fat yogurt (or flavored SF/FF yogurt like Source) to the jello

pour into a bowl or pan and let set for a couple hours

the end result is a cool looking half n half dessert.. the bottom settles into a creamy layer, while the top is clear. So like the same texture as a real key-lime pie (if you flip it upside down)

the ENTIRE THING is roughly 100 calories (depending on what yogurt you use) and is big (ie: 500grams)... so if you cut it into 1/2 cup servings, each peice will only be about 25 calories

pretty much guilt free... 4-6 grams of protein, 0 fat, no added sugar

the only drawback is the asparatame and artificial stuff in the Jello

Something else really good I just discovered is sugar free strawberry jam (I used Great Value from Walmart).  I split a banana put a couple of spoonfuls of jelly over the banana then topped with light cool whip and a  sprinkle of walnut pieces.  It was delicious like a banana split for under 150 calories. 

Also take 4 graham crackers and crush them up put them in a dish cover with fresh raspberries and a dollop of light cool whip and a sprinkle of walnut pieces.  About 100 calories.  These two deserts do not taste like diet they are delicious!!

 I'm shuddering at the thought of jello.  I absolutele loathe it.  It's just colored water, artificial flavoring and artificial sweetener in gelatin, and that's not food.  I'd much rather have a 100 calorie snack that has some substance and nutrition to it.  And my snack was a lot less trouble to make.

I'm actually thinking I might try lime curd on a digestive biscuit. With the lime curd at 60 and the biscuit at 75, that would be a pretty near thing to heaven!

Isami, I am American. I do love English novels and they frequently refer to digestive biscuits. I am not sure what they are though! LOL Are they water crackers? That always made sense to me and that's what I imagined them to be.

When I was a child my mom to make lime curd and put it on top of gingerbread! There was a brand called MY T FINE. I don't think they make it anymore.

I like to take lime flavored yogurt and add graham crackers.

You can also try orange yogurt with mandrain oranges and mix it with fat free cool whip.  

That sounds yummy Thanks for the suggestion I will try it.  I'm still not sure what lime curd is or where I would get it.

Digestive biscuits are something between water crackers and graham crackers. People often call for them in cheese cake recipes as a base. They are crumbly, oatmealy, and scrumptious!

I used to be obsessive about them as a teenager- I could finish like 10 crackers in a sitting (I was also a binge eater thgose days). I havent had them in years so wasnt aware they werent available in the US! Maybe in stores which have a Brit section.

when ildako mentioned the graham crackers, I thought that sounded just perfect! I'll look for them in the store when I decide to have a treat!
