Do not overbake. They are kind of dry, even with the applesauce, but not a bad snack.

Recipe Ingredients for Diabetic Banana Walnut Muffins

1 cup Gold Medal All Purpose Flour
45 grams No Calorie Sweetener
1 1/4 tsp Baking Powder
1 teaspoon Baking Soda
1/4 tsp. kosher salt
1 tsp Cinnamon, Ground
2 large Egg, White
2 medium (7" to 7-7/8" long) Bananas
1 oz Walnuts Chopped
2 serving King Arthur 100% premium whole wheat flour

Recipe Directions for Diabetic Banana Walnut Muffins

Sift together flours, sugar, salt, baking powder, soda and cinnamon. In a separate bowl mash bananas and add egg white and applesauce. Add to dry ingredients and only mix until combined. Stir in walnuts at the end. Spoon into a muffin tin that has been sprayed with non-stick spray. Bake at 375 for 12-18 minutes. The first time I baked mine for 15 minutes and they came out pretty dry but still relatively tasty for a lower sugar snack.
