diet bran muffins
these are sooooo good, I have to make them everyday now... and only 70 cal per muffin!
-2 egg whites
-1/4cup bran
-2 tsp splenda
-vanilla extract
-splash of milk
...
put the bran in a bowl and add some water and/or milk/soy milk and mix so that it is covered, then heat it in the microwave for a few minutes to let the bran absorb the liquid and soften.
now mix the first four ingredients in a bowl with a fork, and add a little milk to the mixture if it too thick... pour into smalller cups (or just leave in the bowl) and throw it into the microwave... cook on med/high heat for about 2 mins until cooked throughly... enjoy with peanut butter, syrup or even milk (like weetabix cereal)
get creative... tell me any other idea's, or ingredients to add to improve anything!
70-80cal... 6g fibre, 10g protein :)

i even doubled the recipe and added a small banana, blended it, and made banana bread for under 200cal for the entire thing!! and about 15g fibre, 20g protein, and a serving of fruit... mmmm
-note: you may need to experiment to meet your tastes :)

Hi Phoenix - I don't see why you couldn't substitute. Just remember your stats will be different than what was originally posted (e.g. the grams of fiber and protein).
hmm yeah they deffinately SHOULDN'T be hard... and as for the flavor, yes it can be a little strange due to all the bran. I like to put a little peanut butter on them or eat them like weetabix cereal (put them in a bowl and add milk)
probably not for everyone, and careful not to eat too much... lots of fiber! But very filling.

mabatts you're welcome... that's what i do too!! :) haha, they really do satisfy carb cravings, its like eating really really whole wheat or sproated grain bread... and they keep you full for a while...
just don't eat too much... i tried that and my tummy didn't feel too good, WAAAAY too much fiber :S

but, where do you buy bran? is it sold in a bag like beans &rice?? or do you use bran cereal?
This was suprisingly yummy. I think next time though I will use less egg white or more bran, my egg white hardened to the bottom and looked abit gross. :P
Also might try softening the bran in hot water before hand to make it more mushy.

i was really excited about trying these too!
i soaked the brain in a little hot water beforehand, and it was a much more muffin like texture that resulted! also 1egg white is enough. :P

no, they really arn't exactly "muffin-like", i think it is due to the lack of excess fats and sugars... i think they are more like sproated grain bread, but "sponge" is a good description too haha

they could work with oatmeal or whole wheat flour... i just used bran for the fibre and lower overall carb content... (fibre and protein keep you satisfied longer)
but you can experiment a little, you may have to tweak the original recipe a bit though... let me know how it turns out =)

I get mine from the hot cereal shelf. Bob's Red Mill makes a nice product. I would think that oat bran would work too.
