these are sooooo good, I have to make them everyday now... and only 70 cal per muffin!

-2 egg whites

-1/4cup bran

-2 tsp splenda

-vanilla extract

-splash of milk

...

put the bran in a bowl and add some water and/or milk/soy milk and mix so that it is covered, then heat it in the microwave for a few minutes to let the bran absorb the liquid and soften.

now mix the first four ingredients in a bowl with a fork, and add a little milk to the mixture if it too thick... pour into smalller cups (or just leave in the bowl) and throw it into the microwave... cook on med/high heat for about 2 mins until cooked throughly... enjoy with peanut butter, syrup or even milk (like weetabix cereal)

get creative... tell me any other idea's, or ingredients to add to improve anything!

70-80cal... 6g fibre, 10g protein :)

i even doubled the recipe and added a small banana, blended it, and made banana bread for under 200cal for the entire thing!!  and about 15g fibre, 20g protein, and a serving of fruit... mmmm

-note: you may need to experiment to meet your tastes :)

*works best if you soak the bran first to soften it*

okay i found next to the oatmeal in another store. really weird that ralphs wouldnt have it, ehh.

 

anyways i'm eating the banana version right now! :)

i'm all out of bran so i used crushed up Fiber 1. it works just as well. put some cashew butter or sugar-free jelly on top! if they get too hard just soak them in some sugar-free syrup...it's an aquired taste:)

oooo mabatts i used to make a different 'hot-cereal' version of these with fiber one as well!

i don't understand why they are getting hard though??

mine never do, sometimes too soft actually... try soaking the bran or fibre one first

if they're too hard, try cutting down on the cooking time.

too soft? bump it up.

if you split the mix into 3 and microwave them consecutively, the microwave might be too hot by the time you cook the 3rd one...so cut the time down a few

I'd definitely try it.... the amount of ingredients you have listed there right now... is that just for one muffin?

microwaving is quick and convieniant... but i am sure the oven would work too

yes that is just for one muffin... 6g fibre, 10g protein, approx 70cal :)

(but i suppose you could split it up into 2 or 3, it does make quite a large "muffin")
