OK, I made some diet coke brownies. It was very good.  I used:

Betty Crocker Supreme Brownie Mix (- frosting)

1 Can Diet Dr. Pepper Berries and Cream

It was very choclately, but, a little more like cake, which is ok.

I cut it into 16 pieces which is about 185 cals per serving, which is a little high for a snack, but it is cake (brownies) after all.  I bet it would be good with some FF whipped topping.  I wonder if I can freeze the extra pieces?  Im going to try.

Overall rating:  I give it a D, for Delicious.
Thanks for the post! I was wondering if it would work with brownies.
Do you have to use chocolate cake mix?  That is what the recipie says on the site.  Could you use vanilla and maybe diet sprite or something?  My boyfriend and I really dont like chocolate cake or brownies but we want to try this....
Hi there, Hey I used diet pepsi in the brownies I made it was great and no one even knew and yes you can use any flavor of colas youd like. They work great even in white cakes..
Any cake or brownie recipe with any kind of soda I think would work.  We tried the brownie because we get serious chocolate cravings.  I have heard other talk about lemon cake with diet sprite or vanilla cake with diet orange, which sounds great to me.  Experiment and let me know.  I individually wrapped our brownies and froze them so they would last a while, but i am going to make something else next week.
Hey I just made my first diet cake with stawberry cake and diet black cherry fresca!  It smells so good!  I'm eating some later for dessert. :)
I saw some frosting ideas on another post somewhere....I can't seem to find it now.  Any low cal frosting ideas?
Ok- am I missing something here? What do you substitute the soda for? The oil? It does sound interesting but I'm not sure what to do....
I've made banana cake and cherry chip cake both with diet sprite. I use lite cool whip for 'frosting'.

jen32966 - you substitute the diet coke for the water/oil/eggs. You just mix the diet soda with the cake mix. Bake it the same length of time and the same temp.
Azell1- thanks....perhaps I'll try that this weekend and see if my family notices...
They probably won't notice. I made a chocolate one first, and I did use regular icing on that one. I didn't tell my husband until AFTER he ate it. He was kind of mad, but he couldn't tell a difference. He finally admitted it was just as good last week!
oh man, I gotta try this sometime... but I guess its not really a healthy choice if you eat the entire cake in one sitting... which i'd probably do. but man, it sounds good.

Diet soda contains aspartame, no? I wouldn't suggest baking with diet soda because aspartame is not supposed to be heated to above 86 degrees because above that heat it becomes fermaldehyde.. just trying to be helpful =] don't won't ya'll to eat poison.

oooh these are my project for superbowl

I've heard of using sugar free dry pudding mixed with cool whip as a frosting...sounded pretty good to me.
