Oh my gosh! I'm totally converted!
I made it with devils food cake and Diet Cherry Vanilla Dr. Pepper - didn't really taste the soda, but what a yummy, moist cake. I put a blob of Lite Cool Whip on it and a few chocolate chips... (Ok, so it ended up being around 200 calories - but I had them available.)
So worth it!

i REALLY want to try the orange soda thing! and Diet Cream Soda. i wonder how lemon cake would be with that Hansen's Lime-Tangerine...
I just got a twelve-pack of Diet Cherry Vanilla Dr. Pepper for work - and I can't WAIT to try this recipe with it! :) The chocolate and diet Sunkist sounds delish too...
Please can someone tell me if you use the mix that's for an 8" x 8" or 13 x 9? The 8x8 one is usually brownie. Or is one can of coke enough for either one? Will add cinnamon too.
i used the 9x13 size mix, and it worked fine. it really bubbles up when you mix it in!!
Thanks, Elin! I was feeling so neglected :(. Just kidding - but that's great to know. Plan to try it tonight! I guess if I get the kind with the frosting I'm supposed to just ignore the frosting part. Ouch.
Poohb, i'm not sure what you mean by finding only cake mix for brownies or w/ frosting. you can't find plain ole Duncan Hines w/o frosting? and the box i bought had baking directions for 13x9 or 2 8-in rounds or cupcakes or loaf. i did 13x9 just to get more servings out of out (or trick myself anyways).
Nirv, that's exactly right. I really think I was pretty thorough. All the mixes were either brownies, which I thought might not work as well, or they were let's say devil's food cake w/ icing. I guess I would have to try a diff store but I'm glad to know that there is a plain chocolate duncan hines to look for. Thanks - I like to trick myself too.
I was so skeptical that when I bought my cake mix - I went with the store brand - so I think it was $.97! Didn't matter - I'm still at work and having fantasies about Diet Coke Cake....
lemon cake mix & diet 7-up.. that's mine for tomorrow night.. mmmmm
Ohhh now I LOVE lemon cake..wonder if I could make a lemon icing with splenda lemon flav and water...hmmmm Gotta be better than the 8 weight watchers cake bars I ate sunday!!!..LOL
Ok, I tried it with a brownie mix. It's really good - I can't believe it calls for eggs & oil instead of a can of diet coke! I don't think I would do the brownie again though. I'm gonna try a higher cake next time. Maybe a white cake w/ sprite - but many more people ranted and raved about the chocolate one. Anyone, it'll be my post-work snack instead of a mini binge. Thanks everyone!
Correct me if I'm wrong, but I am going to eat one of the cupcakes I made last night today after lunch. The Duncan Hines Devils Food Cake Mix says it's 180 calories for the mix and I added a can of diet black cherry soda (0 calories). If I made 24 cupcakes, is each one only 7.5 calories??? This can't be right, can it?
it's probably 180 calories for 1/12th of the mix.. that's what my box says
Way to kill the dream :)
Still it's under 100 calories for the cupcake- and based on all the posts I'm sure it'll be worth it (better be).

oh it will be! :)
ok.. i made lemon cake with 7-up and cut it.. i tried one crumb off the knife (i'm having a full piect tonight) and it was BETTER than chocolate!!!! it was the best tasting cake i've ever made i think!!!! mmmm.. and sooo moist! :)
OK that's it - I'm back off to the grocery store to try new
combinations. I've been telling everyone at work about this
miraculous cake so now I'll have to show them by making them one (plus
I won't be tempted to eat more if I share).

this 'recipe' is so cheap, you can afford to give the majority of it away! i think anytime i get the craving for one, i'll just make it, eat a piece, and give the rest to work ppl. i can afford a 97 cent piece of cake.
Bethy...my husband tried making splenda frosting a while back. it's more of a glaze. but if you take a LOT of splenda (because it gets all fizzy and melts w/ very little liquid) and a little bit of orange juice (not sure about lemon juice), you get a pretty decent glaze. i think i remember it mainly soaking into the cake, but it was good.

This is my baking plan for tonight :D I'm going to try a chocolate cake mix with orange pop- non-diet or sweetened with Splenda, though. The whole "aspartame is unstable when heated" is kind of a turn-off for me, and I figure that the amount of extra sugar/calories in each (I'm planning for mini-cupcakes) will be so small it's worth going with the real thing and not chancing it.
One thing I noticed when I searched this on google is that apparently it works much better if you add 2 egg whites and only use 10oz (instead of 12oz) of the pop- it's supposed to be less crumbly and generally work better. :)
