I heard this at Weight Watchers. Delicious cake idea. If you don't want to eat all the fatty, doughy cakes out there, try this light recipe and people will be licking their fingers off!

Take a prepackaged cake mix (from any grocery store, Betty Crocker, etc) and instead of using the ingredients listed on the back like eggs or oil, mix it with a can of diet coke. Works best with a chocolate or fudge mix. For whiter mixes like lemon powder or vanilla, mix in a can of diet 7up. Yum!

what size pudding mix do you all use? my "icing" was so thick i couldn't use it. it was hard! i think i did it wrong....

good idea with the ff/sf pudding with yogurt. good idea!
When I made a Diet Coke cake for my birthday, my "frosting" was a tub of fat-free Cool Whip that I added a couple of spoonfuls of whipped peanut-butter to (and stirred it in thoroughly, of course).  The cake was chocolatey, so the PB added just the right amount of peanuttiness, and it was almost like a Reese's cake ^_^ !

I am using german chocolate cake mix for easter.  do you think diet coke will work for this or should i use dr pepper or another flavor?  thanks
It will work with any cake mix.
I made this cake yesterday! My mom was a little skeptical...she thought it would taste like crap or not come out at all. Boy was she wrong! It was AMAZING!
YUMMM... my mom makes a form of this with cherry chip cake mix and a can of diet coke... then plain lite cool whip on top and sliced strawberrys... AMAZING and LOW CAL.
EDIT: she actually uses diet sierra mist... all the diet coke recipes must have mixed me up.... oops
Made these cupcakes this weekend and they were absolutely AMAZING-- you could not tell a difference from te orginial whatsoever! Everyone was shocked when I told them the secret ingredient!!!  I used one can of diet coke (w/splenda) and added one egg white just to be safe.  Cooked it for the time specified on the box and they turned out perfectly.  I was worried that they may stick to the paperliners, but no trouble at all.  I highly recommend them to everyone!!
i've been living on angel food cake lately and as far as icing goes the best and best for you is fat free cool whip!  i don't ice the whole cake, just one piece at a time.  you can add choc syrup to it too!

I agree - the recipe's great! Mine did stick to the paper a wee bit - not enough to ruin them though. I could taste the diet coke but my family seems to like them! Woohoo. My icing didn't turn out that well, I used the fat free jello pudding and a bit of cool whip. I found it tastes really milky but again my family seems to like it. Maybe I'm just too picky :P

OMG I just made  this last night and it was so good!!! I want to make a yellow cake using the sprite next.
I made cupcakes with Added Touch devil's food mix and diet C Plus, the orange flavour came through a little bit, which I was hoping for.  They're definitely on the sticky side, but I don't really mind - and this actually made them seem quite decadent when I ate them warm with low fat Cool Whip and fresh raspberries.

Does this can of diet coke work with NO PUDGE BROWNIE MIX? I see everyone has it work well with any cake mix but some posts suggest trouble with the brownie mixes....any success stories with the No Pudge brand?
I thought this idea sounded kind of silly, but after so many people gave it great reviews, I thought I'd try it last night.

I made a french vanilla cake with Fresca- delicious!  I couldn't taste a difference between my cake and cake made with oil and eggs.  For frosting, I used Jell-o sugar free/fat free white chocolate pudding.  It came out a little clumpy (I probably didn't mix it well enough), but the cake tasted great!  I cut into smaller pieces- less than 100 calories for a piece of cake with the frosting :)  Great idea, thanks for sharing!
I agree with you jrmint427.  I thought it wouldn't work when I read the first post, but after five pages of posts raving about this, I decided to try it.  I made mine yesterday with yellow cake mix and Sierra Mist Free.  The frosting is made with the Cool Whip and a packet of SF/FF Cheesecake pudding mix.  It was so good!

The only problem I had was that the middle stuck to the pan, but I scooped it out with a spatula and pieced the cake together.  Because it's so moist the pieces stuck back together and didn't even give me any problems when I sliced it.

I made two 8-inch cakes and decided to frost one and put the other in the freezer.  I figured I'd mess up trying to slice a double layer cake into 12 slices.  I knew I could slice a one layer cake into six slices, though.

I'm going to make another this weekend since my girlfriend's a vegetarian and I noticed when I got home that the mix I used had animal fat in it.  I'll make hers with lemon cake, Sierra Mist Free and cheesecake frosting.

So, vegetarians out there: don't use Wal-Mart brand cake mix.  It's got animal fat in it.

okay i made em..cupcakes....(or should i say they are cooking)   havent tried them yet, as they arent gonna fit into my calories for today, but definitely tomorrow..  am wondering if i can freeze them? that way when i want one, i can set it out to thaw the day before??

okay so i made that coke cake (or should i say Pepsi Cupcakes?) today lol.. i couldnt wait haha.. i did just like it said, add 12 oz of diet pepsi to one dry cake mix, then cooked it just like the box said for 24 cupcakes... while it was cooking i mixed one container of cool whip free to about a little more than 1/2 of a lg box of sf ff chocolate pudding mix (i just added it slowly to watch the consistency and taste)..  so the cupcakes were done and cooled off, i went to get em out of the tin... some stuck a little bit to the bottom, and i bagged 19 of them up to throw in the freezer (icing-less) and iced four of them to try tomorrow with the kids..  couldnt resist though, one that should of gone in the bag lost like half of itself to the tin, so i gave the littles each a bite, and put a small amount of icing on the last bite, and YUM...  IT WAS SOOO GOOD.. it wasnt in my calories for today, lol..  but its a small amount, beings half was stuck in the pan and then i gave them each a bite :)  its only 114 calories per cupcake, so half then divide by 3, i only had 19 calories in that one bite lol... but i didnt taste the pepsi at all and it was just as yummy as any chocolate cupcake with icing i have ever had :)
I tried this with Diet Berry Dr Pepper and Cool Whip free.  I loved it.  My 4 year loved it.  WE are going to try the confetti cake mix with diet 7-up.

The chocolate cake was super moist.  I may have incorrectly measured the soda.
