ooookay, i think i'm a little confused, but just to clarify --

1 can diet soda + 1 box cake mix + oven = low-cal cake?

Yup! The diet coke replaces all the wet ingredients that are normally added to the box mix.  A good tip is to let the diet coke go a bit flat first.  I'd open the can a few hours before you intend to make the cake.  Other than that remember diet coke etc for chocolatey/fudge cakes but it won't look so nice with angel cake etc.  I'd then suggest a clear soda! And I don't know if it necessarily makes the cake low calorie, but def. less calories!

how much of an impact does the soda have on the overall taste, btw? is it totally overwhelming?
I don't think it makes that much difference - possibly a little more sickly sweet.  I made it for three guys who munched a whole tray of chocolate brownies made with diet coke.  Neither of them commented on it tasting strange and it all got eaten so must be a good sign.  They seemed a little put out when I told them it was diet coke brownie though!
What happens if you dont/do let it flatten? I thought the bubbles would help it rise.
But remember - it still has the full amount of sugar!

Here is a bit of a twist on this one....

This is a magnificent summer cake recipe, Use it for birthdays, or holidays. The actual calorie count when prepared with Fat free cool whip is 114 calories a slice----now you CAN have your cake an eat it to. You can add a scoop of fresh berries to this and it makes a very decadent dessert. I would suggest taking a ¼ cup of your favorite sugar free jam and adding it to ¼ of a cup of water or juice. Mix in 1 ½ cups of berries (your choice) and add 1/2 a cup of this on the side instead of ice cream. Just account for those calories in addition to the cake.

Fluffy& Fabulous cake (24 servings) at 114 Calorie

(12 servings at 228 calories)

Ingredients

1 box white cake mix

1 1/4 cup diet 7-up (or diet Mountin-Dew)

3 large egg whites

2 normal size boxes of Sugar Free jello (Any flavor you like) adds an extra 3.3 calories a slice

8 ounces of fat free cool whip

Directions







  1. Spray cake pan with non-stick spray---I like to use a jellyroll pan for this. (If you do the cook time is reduced to 20 minutes at 350 degrees) Otherwise just bake according to the directions on your cake mix box.

  2. Mix together, soda pop, egg whites and cake mix until smooth.

  3. Dump into pan, bake as directed.

  4. Set aside until completely cool.

  5. Poke 25-40 holes in the top of the cake with a chopstick or something similar. Go all the way to the bottom.

  6. Prepare jello as directed, and then pour it over the top of the cake.

  7. Put in the refrigerator for at least four hours, then top with whip cream and serve.

  8. Leftover cake should be refrigerated.

if you can find it try a diet chocolate soda, i know a local brand from the midwest FAYGO makes one and it turned out great in the cake.....tasted totally gross right out of the bottle though.
