Diet Coke Chicken

A friend of mine made this dish for myself and my daughter while visiting her.  I have shared it with many people and have yet to find one that didn't think it was yummy and planned to make it again.  Just don't tell your family how you made it ;)

 

1C Salsa (pick whichever you like best)

1C diet coke

4 boneless skinless chicken breasts

 

mix the salsa and diet coke together.  Put chicken in shallow baking dish.  Pour salsa mixture over chicken.  Bake in oven 425 for 30 min or until cooked through (depending on thickness of chicken) I have also done this with 6 chicken breasts without adding any other ingredients. 

 

Even my kids will eat this dish.  It has no fat very few calories and is the moistest delicious chicken you will ever taste.  Enjoy.  I know we do.

We serve it with either rice to pour the salsa "sauce" over or my friend likes to serve it w/ mac n cheese (homemade) and I have a good salad on the side to get some veggies in.  I hope you like it.  (no pressure LOL)

 

 

I forgot to ask before, is this a tomato pepper salsa or fruit? They both sound good. We eat rice a lot, my husband works for Riceland foods, so it is kind of job security, so I will probably pour the sauce over the rice.

is not good to use anything with nutra sweet in baking, turns into formaldehyde. just a heads up.
I make mine with bbq sauce, red peppers and served over rice.

a salsa like el paso tomato salsa just pick on that you like but if you do it w/ a fruit one LMK how it tastes it sounds good might have to try that...

 

 

as to the baking w/ sweetners eww I have never heard that. I will have to start researching that but I love love love this recipe especially since the whole family is willing to eat it.

 

Hmmm, sounds interesting. I have heard of using Coke when baking hm to 'keep moist'; is that the theory behind using diet Coke - to keep the meat moist ?  If so, one could conceivabley use reg. Coke (1 cup/8oz=100 calories) to make this ?  Just wondering, because it does sound very good !  I am thinking of this with Pork Loin.

I tried a pineapple mango salsa, oh was it gooooooood. I checked out the nutrasweet thing on their website. It isn't dangerous, just loses its sweetening power. The pineapple mango salsa also had jalapeno peppers in it so it was a hot and sweet chicken. Now I have to try with the tomato one.  Good to have different things to do with our friend chicken.
