Diet coke whole grain pancakes ?
So I was thinking, since you know I've heard that people use diet coke instead of adding eggs, oil and water to cake mix in order to reduce the calories per serving (which I thought was a terrific idea!) I was wondering if I could do the same with pancake mix. Usually I buy buttermilk pancake mix and just add water, but I decided to buy whole grain pancake mix this week. However it requires the addition of eggs, water and oil, so I was wondering if I could also use diet coke to replace these ingredients as well. I'm thinking of trying it out maybe tomorrow or monday, I'll let you know how it goes. Do you think it'll be a waste or should I just make it the normal way with the extra calories ?
Only one way to find out.... if it works let me know, i've also heard of people adding fresh squeezed OJ to it for the extra vitamins. Really, if you find out it works i just may do it too, i been using eggo waffles with sugar free syrup, pancakes would be a nice change.
I make pancakes and crepes from scratch and while most recipes you find call for oil, I skip it completely and have never had an issue with it. I have tried using only egg whites instead of the full egg but that just won't do it.. I also replace regular milk for light, plain soymilk and there is absolutely no difference.
Why don't you try only cutting out the oil? an egg does not have that many calories unless you are veg*n? then that's a no go..
A side comment about diet coke and baking - diet coke (and soda in general) has so many additives and empty calories that it seems a shame to replace it for eggs which are 100% natural and good for you... there are also other ways of reducing the calories in cakes, such as replacing the oil with apple sauce, pumpkin, or prune puree which we already know are excellent source of overall goodness... so, what I'm saying is, why not go the healthy route when trying to reduce calories?

If you're replacing egg whites for eggs, make sure you double up. I've never had a problem with this. I'm going to try replacing oil with Sunsweet Lighter Bake in my pancakes tomorrow, I'll let you know how it turns out. In the past, I've done half oil, half applesauce in baking and it's worked fine.

I'm actually not a vegan, but I'm a lacto-vegetarian, so I don't eat eggs. Its a problem when I'm cooking, so I was thinking that the diet coke would be an easy solution. However, I see where you're going with the nutritional value of diet coke, I just thought that using it would greatly reduce the calories instead of adding oil since its basically zero calories. The diet coke I have in my house is sweetened with splenda, which I don't think is horribly bad for you. I think using apple sauce also seems like a good idea, I might try that in the future.

I think it can basically be used with any cake mix, I've even seen recipes for diet coke brownies, although I've never actually tasted any. However, people seem to say it tastes just as good, if not better than using eggs and oil, with a lot less calories per serving. But I guess the only way to know for sure is to try it. I'll tell you guys how the pancakes come out tomorrow. I'm pretty excited haha. :)

If you want to use this recipe, make sure to not beat the batter until smooth like directed! You should always stir pancake batter until just moistened, unless you like your pancakes flat and rubbery. ![]()
So today I tried my recipe..
It was 1/2 cup of Aunt Jemimah's whole wheat pancake mix (240 calories) and about 1/2 cup of diet coke. I mixed the two together in a bowl with a whisk and used cooking spray on my skillet and put it on medium heat. It made about 3 medium pancakes and honestly, I couldn't tell the difference between them and the other pancakes I used to make ! They were still fluffy and tasted really good, and besides the whole grain really filled me up. For a special treat I used a tablespoon of chocolate chips (70 calories) and added them to the pancake mix. Chocolate chip pancakes... Yum. :) Best breakfast I've had in a while, and it was only 310 calories. Without the chocolate chips it would only be 240 calories (the same as the nutrition information for the dry mix).
And emilyd2222.. thanks for that recipe! Another one of my favorites is blueberry pancakes, maybe I'll try that one next week, sounds delicious. Oh, how I love pancakes ! :)
another good trick is using a can of pureed black beans in place of the oil, eggs and water in a brownie mix. super easy and adds good fiber and protein
Awesome! I will have to try that! I don't have any diet soda in my house right now, but I do have diet non carbonated drinks. Do you think the carbonation has something to do with how the pancakes turn out?

I was thinking maybe try the diet coke for waffles? Actually I have a vanilla cream soda. I've done it with cake, brownies, and cookies, so why not.

I tried using diet pepsi with 30g of no name pancake mix(100 cal) in place of eggs, oil, butter, & milk. It only made 2 small flat pancakes, the box says 30g will make 2-3 medium sized. They tasted alright, but it was a waste of 100 cals being so small and thin.
