Any different ways to cook veggies?
I'm getting tired of the same old veggies. Does anyone have any good ideas and recipes for veggies. I would like ethnic recipe's. Thanks!
An easy thing to do now that the weather is warming up, maybe grill some, or make some kebobs. Simply brush on some Olive oil and some minced garlic, or alternate w/ some pineapple chunks and peppers and onions brushed with teriyaki, serve it over some brown rice. I like using a variety of bell peppers from yellow to red, its a great source of vitamins and make a nice presentation if you have company.

End of the Garden Vegetables
Have you tried roasting carrots? Split them lengthwise, toss with just a tiny bit of olive oil, to help the seasonings stick. Toss with salt and pepper and arrange on a baking sheet in a single layer. Bake at 350 for 20 minutes, or until done as soft as you like. I like them with a bit of crunch in the center. The roasting brings out the sweetness.

Wrap them in tin foil with some butter or butter-replacement in there with em, then grill em with the meat. Yummy
Last night I made a split pea / asparagus stew based on an ayurvedic kichadi. It was delicious!
Ingredients
1/8 tsp saffron (optional)
2 tbsp olive oil
1 medium onion, diced
1 tsp cumin seeds
1/2 tsp fenugreek seeds
1/2 tsp curry powder - use curry leaves (neem) instead if you can find them
1 tsp salt
1 1/2 cups dry split peas
4 cups water
1 lb asparagus, blanched
15 1/4 oz corn

Ingredients

- Dry roast saffron in large deep saucepan about 2 minutes.
- Add olive oil, cumin and fenugreek. Cook until seeds sizzle.
- Add onion, a pinch of asafaetida, curry powder and saute until onion is soft, about 5 minutes.
- Add split peas, salt and water. Bring to a boil, cover, turn heat to low and cook until peas are soft, about 40 minutes.
- Add asparagus and corn and stir to mix. Cook another 10 minutes and serve.

Soups are a good way to get your daily veggies, and it's so filling! Almost anything can be made into soup.
roasting!
roasting makes veggies taste so good! also throwing in fresh or dried herbs (rosemary, thyme, cumin, sage, whatever!) makes it extra special. you can mix up the flavours and go thai, moroccan, greek, whatever you like.
you can even roast cauliflower. i put a tiny bit of roasted sesame oil on them (a little goes on along way with that stuff), some sesame seeds, salt and pepper, crank the oven to 400 or so for 15-20 mins. yummy!
you can even throw leftover roasted veggies in broth and whip up a nice wholesome hearty soup.

Parmesan Green Bean Bake
- 1# fresh green beans, chopped the way you like 'em
- skim milk
- 1 Tablespoon real butter
- 1/2 cup seasoned bread crumbs
- 1/2 cup grated parmesan cheese
- Par-boil beans; drain
- In micro-safe mixing bowl, combine butter, bread crumbs, parmesan and just enough skim milk to moisten everything
- Nuke until butter melts; stir
- Add more skim milk until you have a thick paste
- Toss the par-boiled beans with the paste, covering the beans well with mixture; spread into 9x13 pan
- First bake for about 20 mins at 400, turning twice
- Then broil for about 8 minutes, watching closely; you want the top of the beans to be brown, bubbly and crispy
stuffed red or green chili peppers - just finely chop onions and finely dice vine-ripened tomatoes & stuff the pepper - no need to roast - this is the best mix of garden veggies i've ever eaten - easy to make 3 or 4 and take one to lunch or eat as a snack - just so healthy & tasty
Here is another idea for roasted cauliflower -
Toss florets with 1 or 2 tbsp of store bought tandoori sauce/paste, mixed with a little grated ginger, some minced garlic, and some ground cumin, if you like. Roast in a fairly hot oven until tender - some ends will be nice and dark.

I make carrot hashbrowns. Shred carrots and one small red potato with skin. Put small amount of olive oil in a non stick pan and brown. I season with salt, garlic powder and the non calorie spray butter. I have thought about trying it with a sweet potato and seasoning with no calorie butter, cinnamin and splenda.

I have found a great way to cook my veggies and now it is the only way I use. I take either 1 tblsp of Canola or Olive oil and brush on veggies then I sprinkle sparingly Sea Salt, roast in oven on 400 degrees for about 10 minutes it comes out fantastic. I have done this with asparagus, broccoli, cauliflower, mushrooms, tomato, red, yellow and green peppers. I will never boiled or steam again.

My dad used to make cabbage on the grill that was super-yummy. He would slice the cabbage in half, placing each half on a piece of foil. Then he would drizzle the halves with Italian salad dressing and sprinkle it with parmesan cheese. Then he'd wrap up the halves in a little foil ball and place it on the grill while he was cooking everything else. Yum-o :P

Buddha's Delight is good and easy. You can modify the sauce however you'd like, by cutting down on the soy sauce or oil, or by substituting something sweet like tamarind juice or honey for the sugar.
I really want to try the roasted veggies!! They sound sooo good! But, I have a stupid question... Can I use the frozen veggies?
It might not work because of the water content. You could thaw them first and then try to dry them as much as possible. It might work. Let me know?
