I have lots of recipes and lots of ideas for meals.. but they all seem to have a lot of calories!  All my old favourites... nixed. :) Ok, not ALL of them but roasted vegetables are totally out...

What did other veggies eat for dinner tonight?

watermellon On the burger or with it?  I saw someone grilling it.... on the food channel, looked interesting, but I haven't tried it .
haha, no, as a side.  I'm all about random mixes of food, but watermelon sandwich doesn't sound appetizing.

Grilled, though?  Maybe.  Never had a grilled fruit/veggie that I didn't like. 
Tonight I had a huge salad with romaine lettuce, watercress, snow peas, cherry tomatoes and cubes of tofu, tossed with an orange soy and ginger dressing.
This is one of my favorite recipes (I'm a vegetarian, so I have lots of them!)  If you haven't had a chance to try quinoa (keen-wah), I recommend it!  Totally yummy!

  • 1 teaspoon olive oil
  • 1 onion, chopped
  • 3 cloves garlic, peeled and chopped
  • 3/4 cup uncooked quinoa
  • 1 1/2 cups vegetable broth
  • 1 teaspoon ground cumin
  • 1/4 teaspoon cayenne pepper
  • salt and pepper to taste
  • 1 cup frozen corn kernels
  • 1 (15 ounce) cans black beans, rinsed and drained
  • 1 (15 ounce) can of tomatoes (organic is best!)
  • 1/2 cup chopped fresh cilantro
    1. Heat the oil in a medium saucepan over medium heat. Stir in the onion and garlic, and saute until lightly browned.
    2. Mix quinoa into the saucepan and cover with vegetable broth. Season with cumin, cayenne pepper, salt, and pepper. Bring the mixture to a boil. Cover, reduce heat, and simmer 20 minutes,
    3. Stir frozen corn into the saucepan, and continue to simmer about 5 minutes until heated through. Mix in the black beans, tomatoes, and cilantro.

  • i had cheeseless pizza with spinach and crushed red peppers
    Last night I had a BLT salad from Cracker Barrell (no dressing, dont like the stuff).  Tonight I'm having pizza hut...oh dear lord I can't wait.
    My husband is a vegetarian so this is what I cooked for him:

    yesterday: veggie patties which onions and peppers, brown rice, spicy cauliflower. 

    today: 2 veggie hot dogs grilled and whole wheat pasta with broccoli, garlic and olive oil.

    I just made the same thing for my family last night.  Quinoa and black beans, except my recipe didn't have tomatoes.

    I love the website allrecipes.com.  That's where I got this recipe.  The only problem I have is that they don't list servings in anything that is easily measured.  They will say 1/6 recipe, etc.  I would like grams or cups, etc.  Anyone have any ideas?
    Last night for supper I had tomato soup with low-fat cheese melted in (I'm lacto-ovo) and a salad made up of iceberg lettuce, baby spinach, blueberries and black beans.
    we had pan seared salmon with fresh lemon, roasted cauliflower, and steamed edamame with sea salt, plus a homemade rhubarb and strawberry cobbler, and, yes, we still managed to stay within our allotted calorie count!  Yay!
    The new SoyWhip.... SO GOOD :) We munched on strawberries/soywhip for dessert last night. Oh and a Nana cookie....I am finding I am now having to make sure I get enough calories. I love this site.

    raehn, that sounds a lot like the "Mexican Style Quinoa" I had for dinner(mine did not have black beans or corn though).  I also had a black bean burrito(flour tortilla,black beans, salsa, tofutti sour supreme) and some homemade berry sorbet(I added some mango too).  I am pretty much following recipes I got out of an Ornish book because ,even though I am veg, I have high cholesterol(Thanks Dad).
    Hey, Wendy!  That's where I got that recipe from, I just modified it a little bit by adding a can of tomatoes and taking away a can of beans... it was terrific that way!  I agree though about the serving size. This website is great for getting serving size analysis of recipes!!

    Dinner tonight it's a one dish meal - a bean casserole, with kidney beans and vegetables in a cheese sauce, topped with salsa.

    One of my new favorite meals is escarole with canellini beans.  You put a little olive oil in one pan and cook down a head of escarole for about ten minutes, seasoned with red pepper flakes.  In another pan, you heat some garlic, then add a can of the beans WITH the juices and cook that for ten minutes, until it's creamy.  Then you mix them together and cook a bit longer, and serve it with the healthiest hearty bread you can find.  Protien and dark green veggies--very good for you!

    Not very interesting, I had smart ground (soy meat) with taco seasoning and on 2 small low-fat yellow corn torilla's and a weight watcher's carrot cake.
    I had a home made wrape with black beans, tomatoes, lettuce, and salsa with a la tortilla factory tortilla.  mm  mmmm good.    
    2 veggie hot dogs (40 calories each, they're relatively small) on toasted whole grain bread, baked beans, and some milk.
    Pasta, with steamed spinach, toasted pine nuts, black olives and cheese in a white wine sauce. The olives doubled the calorie count but are too yummy to resist! [image]
    Soy Whip?!?!!! I must find this ASAP!  I've tried making vegan whipped cream before and I severely failed........

    I haven't made dinner yet tonight, but last night I sauteed seitan, onions, garlic, carrots, sweet peppers, and spinach in a tiny bit of olive oil with thyme, salt, and pepper.  Mashed up some yam and red potato (microwaved) with soy milk and spices too... then one twizzler for dessert heh.
