I have lots of recipes and lots of ideas for meals.. but they all seem
to have a lot of calories! All my old favourites... nixed. :) Ok,
not ALL of them but roasted vegetables are totally out...

Well, I was not really "veggie" 'cause I eat fish 2x a week . . .
Tonight, I had tilapia, broccoli, and jasmine rice. :)
Yesterday, though, I had a lovely eggplant and tofu curry with peppers and onions. Delicious!
And the day before, I had whole wheat fettucini with crushed roma tomatoes, fresh spinach, garlic, oregano, and cilantro, some red onions and mushrooms, and boca ground "meat". Also yummy. :D

Last night I had a courgette and tomato bake, based on an old Elizabeth David recipe which was in the Guardian's magazine yesterday:

I swapped the butter for olive oil (good) and cheddar cheese (less good idea as it didn't melt into the breadcrumb as butter would have). It would work without any butter or cheese dotting the breadcrumb though.

I had a stir-fry with flax spaghettini, peas, carrots, corn, green beans, yellow peppers, onion and chicken... all fried in balsami vinegar! YUM.

Why are roasted veggies out? ~boggle~
This is a vegeterian Indian dish.
makes 8 partas:
Blend 1 cup spinach with 0.75 cups low fat or fat free cottage cheese.
Add salt to taste.
Mix with 2 cups whole wheat flour. knead the dough till smooth and non-sticky.
Cover with a clean kitchen towel and let it sit for 1 hour.
Roll it out into think 5" diskettes and toast both sides with a little olive oil on a hot girdle.
Serve with your favorite hot sauce..
This averages around 75-100 calories per parata.
I cannot eat more than 2 along with a small cup of black bean salad.(total of 300 calories)

For breakfast (even though this says dinner....), I made seitan hash with almost all farmers' market produce... red potatoes, yam, beets, red onion, scallions, carrots, sweet peppers, garlic, and White Wave Seitan Stirfry Strips... sauteed in olive oil until potatoes were browned.... with thyme, black pepper, red pepper flakes, and salt.
We also had pumpkin pancakes with pumpkin pie spices on top (and in the batter), using whole wheat flour, ground flaxseed, brown sugar, soy milk, applesauce, canned pumpkin, and vanilla extract.
Yummy yummy :)

Just back from a long trip where I got very bored of the veggie options available in restaurants...
Last night I had roasted sweet potatoes and halloumi, with red onion, garlic, mushroom and yellow pepper:

I am having grilled pork chops (Bone-in), hash browns, fried zuchinni and a fresh vegetable salad.
why don't you grill your zucchini instead?? It tastes really yummy (especially if tossed in a bit of olive oil & balsamic vinegar) and it's better for you!

Tonight I made a wonderful soup out of "no chicken broth" with chopped potatoes, onions, carrots, celery, cabbage, garlic, corn, peas, and broccoli. Then added a little unsweetened soymilk to make it creamy looking. It was so good I ate 3 bowls of it! It was mostly veggies and the most calorie dense thing was potato which I used sparingly so I'm trying not to beat myself up over it.
Nicole pumpkin pancakes sound delicious. I came across a recipe for them on vegweb the other day and have been wanting to try them.
It's funny, I have been babysitting my cousins cat for the past few months. He is this vibrant orange color and ever since he's been around I have been craving pumpkin foods. Also his eyes are the color of pumpkin pie :)

Sarah_sue, you should try them--they are sosososo good--and then with a little maple syrup on top, they are to die for. We pretty much always have them with a seasonal seitan hash (this next time, I think I'll use some butternut squash in there too! Yum!).

No but I call him my pumpkin pie. His real name is Denton. They got him at a cat shelter and he came with that name. I don't think they like it but they haven't changed it. Her husband calls him his little orange shadow.
My dinner is all prepared. Brown rice, red kidney beans and swiss chard, with cajun spices, onions & peppers. It smells so good I don't know if I can wait for supper!
I'm making wild rice and roasted eggplant - stuffed acorn squash (roasted in the oven) with an apple crisp for dessert, with apples from the farmers market......... can't wait!
steamed baby carrots, small pork chop (boneless), steamed potato, cream corn for the potato...
