I have lots of recipes and lots of ideas for meals.. but they all seem to have a lot of calories!  All my old favourites... nixed. :) Ok, not ALL of them but roasted vegetables are totally out...

What did other veggies eat for dinner tonight?

Tonite I had spaghetti with onions, garlic (heaps, mmmmm!), basil, oregano, diced tofu, mushrooms, green olives and Tomatoes served over Hodgson Mills whole wheat/whole grain spaghettie.  It was yummy!  
Vegan Chili Dogs :)

I took some 2 smart pups and put them on toasted whole wheat hotdog buns and topped them both off with some leftover vegan chili that I made last night for dinner (with various beans, diced tomatoes, chili powder & a small amount of gardenburger crumbles) SOO good!

mmm, those chilli dogs sounds delish!! I had good ole bangers and mash with a twist. spinach and ricotta sausages (not home made i'm afraid!) sweet potato and horseradish mash and steamed leeks.

I had Spring Greens Vegetable Stew w/ Tomato Almond Sauce, a Carob Smoothie, and a pink lady apple.
a salad, and some corn on the cob...
try putting your roasting veggies in a large bowl.  then take 1 tbs of olive oil and mix it as best you can with 3 cups of water.  pour over the veggies.  you still get that "roasted goodness", but a lot less fat!

last night we had homemade split pea soup :P

toss the veggies in the oil and water mixture, then drain and roast

Home-made vegetable patties (lentil and brown rice base) toasted on crusty garlic-onion-herb rolls with a large side of steamed broccoli.
why are roasted veggies out?

i toss mine in lowfat salad dressing, and can make a huge batch for low calories.
I'll keep it going...Last night I had a HUGE veggie and black bean burrito on a whole wheat tortilla with homemade guacamole and salsa (no cheese or sour cream)

Last night I was a bad girl. I went to the movies and snuck in junk from the dollar store so I wouldn't have to fork over $4 for a soda. I had a salad for dinner though.
Spaghetti with fresh tomato sauce. MMm
we had lean beef burgers on kaiser buns with homemade guacamole and low fat mozza....mmmmmmmmmmmmmmmmmm
Tonight = vegetable fajitas with raw spinach in pitas and baked chips with homemade raw pico de gallo.
