Any Dinner Ideas?

I'm stuck on what to have for dinner.  Has anyone made anything yummy and unusual lately?

What ingredients do you have to play with?

Zuchinni, squash, spaghetti squash (not cooked), cheese, whole wheat tortillas and I think I have some canned black beans. Salsa, pasta, pasta sauce. eggs.

WhÝ don't you make fiesta breakfast burritos. Scramble the eggs with the black beans and place in the tortilla...put some cheese in it, roll it up, make it toasty in a pan. Top it with salsa and enjoy :)

I am making this recipe for Indian poro tonight submitted by another CC member.  It is VERY yummy.  I replace the chili peppers with crushed red pepper flakes, and have used ground ginger instead of the ginger paste.  It is probably not as authentic as the original, but it is delicious.  I sprinkle hot sauce/lime juice at the end, and serve with a cucumber & yogurt dip.  I also add more veggies in it (the zucchini would be nice!) if I'm having it for dinner.   

 

Oh I am having spaghetti squash tonight... although had a bit too actually (needed some snackage! ha ha)... If I were you with the ingredients you listed off.... I'd use the spaghetti squash as a bed on the plate... and sautee some zucchini in olive oil with oregano, salt, pepper & garlic.... and then poach or over easy 2 to 3 eggs to put on top of the sauteed zucchini that should go on top of the spaghetti squash... and if you're feeling like you need a bit of tomato... use a bit of tomato sauce as "garnish".
