What to have for Dinner- victim of poor planning

Quote  |  Reply

Sometimes I think the hardest part of weight control is figuring out what to eat for dinner.  Lately I haven't been quite as organized and it sure hits home when I get home from work.  Over the past several days I have resorted to the good old quick stand-buys (Spaghetti one night, tacos another) but tonight I am out of ideas.   I guess I will take a walk to the my grocery store and by something fresh that I can make up quickly when I get home. (4km round trip) The only part I don't like, is I have to go to the grocery store when I am a bit hungry.

What do you do when you need a good meal fast?

What do you have in the house as staples.  I find that I can make a lot of unplanned meals by what is just in my cupboards.
I ususally have a big chicken salad when I don't have time for anything.  I keep chicken breasts in the freezer.  I take one out, boil it (does take long to cook all the way through that way), chop it up, fix my salad, and then throw the chicken on top.  Then for dessert I eat some apples, organes, berries or whatever fruit I have on hand.  Yummy and filling.

well... fast i go for breakfast for dinner... eggs or omlette, toast, whatnot.  breakfast foods are generally the fastest to prepare

unplanned?  i find that salads work well for me... so do soups... what ever is on hand and looks good can go in.  yesterday i had marinated tomatoes, w/ feta cheese on romaine lettuce and chopped up a chicken/spinach sausage to go on top.  boulion  can be a lifesaver for soups... throw in the meats/ veggies/ grains on hand with water and boulion and there you go.

I find it helpful to cook up a big pot of lentils on Sunday, and then I can take a half cup or so and dress it up with sauteed onions and ginger for dinner anytime.  With a little whole wheat couscous, which takes about five minutes to prepare, it's a healthy complete protein.  And I usually add some steamed veggies for bulk, since a half cup of lentils and a half cup of couscous isn't exactly a substantial dinner.

Thanks for the suggestions.  It is great to have a some new ideas ready and waiting.
