In dire need of new recipes

I need some new recipes and can never seem to find much that interests me when searching for veg recipes online. I'm a fairly picky eater when it comes to vegetables (for instance, I hate broccoli and am terrified to try asparagus).

Anyone have any good/cheap/easy ideas for me?

Lentils! Cook 'em in vegetable broth and whatever herbs/spices you like best, and throw in cut-up veggies of whatever variety you DO enjoy (I use carrots usually, plus maybe some apple diced small, or some nice crunchy radish, or really any vegetable that stands up pretty well to a warm environment) once they're just about done. You can also put in nuts, dried fruits, or seeds to make it a heartier meal. It fills you up, it's full of fibre and protein, and the vegetables aren't overpowering because there are so many other flavours and textures.

I have an idea, try asparagus!  Even if you hate it you can atleast say you've tried it.  I personally love asparagus, its my favorite.  I steam it in the steamer for about 45 minutes until its all nice and mushy.  Others like it grilled with a little sugar, I've never tried this.

Re:  lentils

I LOVE lentils!  What do they taste like?  How can I answer that.  There are a few different types.  The red and orange and yellow lentils can cook up very mushy, loosing their original shape.  I use these to make my version of very low calorie dahl (Indian inspired.)  If I make it  thinner, then it's a soup.  If I make it very thick, then it is a substitute for hummus.  (ie place it in a wrap, add raw spinach leaves, carrot strips, etc and roll it up.) 

The brown and green lentils hold their shape and I use them in different recipies.  Let me know if you want more information.

Also, I really really like this website for recipes.  Make sure that you read the reviews before making any of the recipes as people give lots of suggestions for adjusting the recipe.

Have you ever tried red potatoes? You cut them up into cubes, throw them in a deep dish pan with some olive oil, garlic, rosemary, salt and pepper and bake them till they are golden brown at 400 degrees for about 30 minutes....You could even throw some onion in there.

We are having them with dinner tonight...mmm.

Or try green beans the same way, but without the rosemary. ANd put some lemon pepper on it as well.

Or artichokes. Just steam them....so good!

Ummm...Carrots on the grill. With some butter or olive oil. Toss them with onion and garlic and salt and pepper and grill them in aluminum foil for 15 minutes after putting them in the microwave (without the aluminum) for 5 minutes to soften them up.

Try aparagus...it's so good. With olive oil or sesame oil in the oven for 15-20 minutes at 350.

I don't like brocoli either...it's gross.

But cauliflower is good. With some melted velveeta cheese and paprika. Just steam the cauliflower, then put the cheese sauce on top with anything you like for seasonings.

But I found this rice called forbidden rice... it is purple and short grain, and it is delicious! I cooked it with onions and mushrooms (a bit of olive oil)... yummy!

Also, I love love love fresh veggies... I cook eggplants (small cubes) in water first, then add tofu, tomatoes, celery, oregano.... very tasty and low calories as well ;)
i'llwritethenext-- I love red potatoes. My favorite way to cook em is to quarter them, boil em til soft, then put a small container of pesto in it and mix it... then spread em on a baking sheet and put in the oven on broil for 10 minutes. They're heavenly. I've made them for all the roommates I've had (oh lord... like 8 in the past 2 years... there was 6 of us at once though) and they all loved them.

And Katy--- I found a solution to your cooking rice problem-- minute brown rice. It takes 5 minutes to cook. lol
Here are some of my favorite veg food:

morning star veg. crumble sauted with oniions and garlic in little olive oil and then mixed with whole wheat pasta, if you want you can add tom. sauce and it will be almost like "meat" sauce.

canelini beans cooked with garlic and tossed with whole wheat pasta.

Veg. sausage and peppers.

scrambled tofu (if you want the recipe, I'll give it to you)

I had my second success with rice today! I'll look into that 5 minute rice though, I get pretty impatient :)

My favorite veg. meal is curry chickpeas and its super easy.  All you need is a great nonstick pan and the CHEAP ingredients below.

1 can chickpeas (garbanzo beans)

1 can tomatoes with green chilies

1-3 T. curry powder (depending on taste)

1 c. chopped onion (sometimes I use frozen for convience but fresh is actually much better because it gives a little crunch)

1 T. oil

Sautee the onion in the oil for about 7min.  Add the curry powder and sautee for a few more minutes.  Add the chickpeas and stir until well coated and heated through.  The mixture will seem really dry but thats okay.  Add the tomatoes.  Simmer on med heat until heated through.  Add water to change consistency if necessary.

Its that easy and soooo good.  If I am eathing seafood that day I add shrimp before I add the curry and cook them all the way before adding the curry and peas.  When I use frozen shrimp I pour off most of the water before adding the curry.   

With or without shrimp this meal is great on its own or sometimes I put it over plain coucous with a little salt.  I hope someone else enjoys it as much as me!
