I don't know what to make for dinner! Help me out?
I have to go grocery shopping, but I'm not doing it tonight! I have some chicken breasts, frozen veggies, sweet potatoes, and every spice under the sun. Could someone please give me a good recipe to throw together? I'm not feeling too creative tonight....
I'd say, bake or grill the chicken breasts, using a cayen pepper or VERY peppery-spicey substance, garlic, and use a bit of lemon juice/lime juice/citrus juice on top.
Cook up the veggies together, if you want to make them special, just add some pepper and basil or other fresh tasting herb.
Sweet potatoes, try making a casserole out of them, by cooking them, mixing them in a mixer, adding nutmeg, cinnamon, and if you like it sweet, splenda (if you have it, if not, sugar is alright), and sprinkle the top with splenda brown sugar, or honey.
They don't all have to be mixed together =3
How about a stir fry? If you search recipes under sam's stir fry I have a recipe out there - just substitute chicken for whatever protein I used last. It is one of my son's favorites! It would be fine to dice up the sweet potatoes and throw them in, or just saute them thin sliced on the side with some orange juice, ginger, and pepper.
this is a little on the creative side, but i'll say it anyway:
cut up the sweet potatoes and boil them in chicken/veg broth for 20 minutes. mash w/a masher or immersion blender (or transfer to blender and blend). add fat free sour cream/soy milk/skim milk/lite coconut milk for a bit o'creaminess. cut up chicken into little pieces and cook it real fast in a pot w/just a dash o'olive oil. transfer chicken to sweet potato mixture. add veggies, nutmeg, oregano, pepper, salt, maybe cumin or curry. yummy, hearty, nutritious stew!
I was also going to suggest lemon chicken, pan seared/sauteed or grilled. Or better yet, if you have some fresh lime juice, season your chicken with salt, pepper, and chili powder. Squeeze fresh lime all over at the end of cooking and sprinkle a light dusting of extra chili powder over this. Or, mix the lime juice and some chili powder into your fav. BBQ sauce (if you use and have some). Baste the chicken breasts with this mixture on both sides during the last 2 to 3 minutes of cooking time. We love this!
Ditto the above on the sweet potatoes. Also, if you have some cooked pears lying around, canned pears, diced pear cup, whatever, drain them (and rinse if in anything but extra light syrup, can do this anyway if you like regardless), and puree in a blender or food processor or mash to a pulp with a fork. Mix in with sweet potatoes, cinnamon, nutmeg. The pears give the sweet potatoes an incredible richness. You can also add a smidge of butter if you feel you need it. It's optional, of course, and with the pears, you shouldn't miss it. If you don't rinse your pears (or if you throw in a teaspoon of extra light pear syrup with your dish), you probably won't even need to add any additional sweeteners. I'm betting the grilled chili/lime chicken would be killer served over a bed of these pears/sweet potatoes for a sweet/spicy treat. ;-)
Note: Crushed pineapple also works well in place of the pears, but the pears are better in this dish, IMO.

Maybe you could make sweet potato fries (one of my favorites :D) Cut them, spice them, a little olive oil if you can, then 30 minutes in 400 degrees. For the chicken, I'd just season it with some salt and pepper, and any other spices you might like with chicken. Heat up some extra virgin olive oil in the skillet, sweat some minced garlic and onions, then sear the chicken for a minute on each side. Pop it in the oven next to the fries for 12-15 minutes.

As for throwing some pears in with the sweet potatoes -- that sounds really gooood. I'm going to have to try that! Anyhow, I'll get my butt to the grocery store tomorrow so I don't have to post on here again asking "what to make for dinner."

Microwave a sweet potato, grill a chicken breast, and steam/microwave some of the veggies... voila, dinner in 15 minutes.

bake the chicken and cut it into strips and make 'chicken strips'. Eat it with ketchup. Slice up and bake the sweet potatoe for some sweet potato fries. then make some veggies ;) You can even eat them raw with a little italian.
