I don't like dinner..
I know, it's sort of an unusual thing.
But I just don't like it. I don't like "dinnery" foods. I don't like to eat hot food at night.
I love lunch and breakfasts, and I love to snack, but when it comes to dinners, I don't know what to fix that I will enjoy besides chicken and veggies. That gets boring pretty fast.
I also do not like to eat starchy carbs at night. Dinner is typically my last meal, and when I eat bread or rice or pasta, I find myself hungry later.
Does anyone have any ideas for meals that I could fix myself that aren't too supper-like? It's a strange request, but I just want something neutral to eat, and easy to prepare.

Soup? An open-faced sandwich or a wrap? How about breakfast for dinner - eggs and bacon/turkey bacon, oatmeal, a big yogurt/fruit parfait? Oh, or salads? That provides endless combinations. You could add chicken, salmon, tuna, nuts/seeds, any types of vegetables, apple slices, beans, cheeses, whatever you want.
I'd say soups are your best bet. It's not hard to make good homemade soups. Soup can be high in nutrition, low in calories and very filling. It can incorporate all the food groups too. For instance - a soup with chunks of chicken or meat and vegetables, a little whole wheat pasta or brown rice, with yogurt for dessert - there are all your food groups including a little fat from the chicken or meat, or a small amount of olive oil used to saute things before adding the liquid.
Why do you have to eat "dinner" food for dinner? If you like breakfast, eat it twice a day. :)

I eat breakfast foods for dinner all the time. Breakfast is my favorite meal of the day and today is breakfast day. I am leaving tomorrow for a week and Im trying to use up the milk in the fridge because it will be spoiled when I get back, so Im having cream of wheat for dinner and fibre one for a snack! So if you want breakfast food, eat it for dinner too!!
Dinner is my favorite, tuna casserole, eggs and toast, pancakes and waffles, tuna and turkey wrap or sandwich, chili, pasta and sauce, soup, stir fry, omelet, Beans and tuna in a wrap, pizza.
why not eat breakfast and lunch foods for dinner then? like a vegetable omlet, fritatta, paninis... the possibilities are endless!

I use whole wheat egg noodles. One bag
Mix a can of tuna in water. ( I rinse it using a strainer to remove a lot of the sodium) 1 can of 98% fat free Campbell's cream of mushroom soup, 1 can of peas, fresh mushrooms, chopped onion. Garlic and onion powder. Mix it all together and bake until done. My husband adds cheese to the top. I skip the cheese. I also sometimes add a few tablespoons of fat free plain yogurt. It is very good.
SHELLY-thanks, yea, we always had it with cheddar cheese mixed in but never had it with peas.

Yes, I use a large casserole dish. I love the cheese too but usually skip it because of the calories. But if I use it I like Heluvagood Extra Sharp Cheddar. YUM. I have altered most of my recipes to be lower calorie. I love stuffed peppers, spaghetti, tacos and burritos, grilled cheese, baked ziti, scrambled eggs with mushrooms, peppers, potatoes, onions. I have found ways to make them healthy.
You could do a European breakfast for lunch - cold cuts, bread, and cheese with fruit. Or cereal with yogurt.
I like to make steak instead of chicken sometimes to mix it up.
Wraps are another good idea. Chicken cesear pita, yum! Or scrambled eggs warpped in a whole grain tortilla with salsa.
Also, portabella mushroom burgers/fajitas are delicious as well.
Why worry about eating "dinner" foods at dinner? I eat out for dinner on Friday evenings, and I cook dinner one weekend night. The other five days, I don't eat anything remotely resembling "dinner". Most nights, it's some fresh fruit or veggies and a protein shake.
