This is in Dr. Fife's coconut cookbook.
| 2 | egg yolks |
| 2 | T lemon juice |
| 1/2 | T Dijon mustard |
| 1/8 | tsp paprika |
| 1/8 | tsp salt |
| 1/4 | cup olive oil |
| 1 | cup coconut oil |
- Blend everything but the coconut oil
- for 60 seconds.
- With machine running, very slowly pour in 1 cup coconut oil. Mayonnaise thickens as the oil is added. Be sure to add the oil slowly, pouring in a thin stream. Taste for seasoning and adjust as needed. Store in fridge.
