Easter Dinner Vegeterian Recipe
Hi everyone!
I'm a new vegetarian and going to Easter dinner hosted by family members that are not. I'd like to bring a dish that is healthy and apealing to others that are not necessarily vegetarian.
Any suggestions?
I'm a new vegetarian too. I don't know how to cook much (still learning, even at 16 years old) and I've never heard of a particular meal for Easter, maybe because I live in Australia, but I think an old favourite has to be potato salad. :) Or something of the like. I think I have a potato problem at the moment. There's a slice thing my mother makes with pasta and crunchy potato and cheese on top. Not necessarily low-cal, but... ;)
How about a big salad with all the works, or seven layer salad, with out the bacon,
I use a web site allrecipes.com, it has everything, including vegetarian recipes. lots of ideas, and it is free.
I have the same problem, big family get togethers and my family is the only vegetarians, we just eat what we can, and endure the comments. Good luck.
Just wanted to say I made this today, did not use cherries (subbed about 1/4 c of diced chocolate chips that were leftover) or the agave nectar though because it was Seriously pricey... may go back and get it for future recipes though. Used a little bit of raw sugar and water and made a syrup by reducing it... plenty sweet!

My husband didn't even know there was tofu in it! So I think it's a keeper around here. This site has a lot of fantastic recipes on it =) Hope it help
I've also only just gone veggie, but I have a few veggie recipes under my belt that are always a winner with meat eaters. My favourite is goats cheese and caramalised red onion tarts they're awesome and actually not as hard to make as it might seem. Here's delia's recipe for them:

The cheese pastry is very good but if you can't be bothered to make it then just buy pre-made stuff, it does the trick! Also, if you don't want to waste a whole egg on brushing the pastry, just use milk instead. AND, if you don't have individual tart tins, I've made mini ones in cupcake tins before - worked a treat.
Anyway, these make a nice starter or you can have it as your meat replacement with the roast.

My mom makes an awesome vegan tofu quiche (not sure how fattening, though). I can post the recipe later...I concur with pteresa19 about allrecipes.com, they have an awesome vegetarian section.
I was also going to do a vegetarian Easter this year, and wasn't sure what recipes to use and it was hard to find any because it's rather untraditional. So I got some cook books from the library and started flipping through them. I found Lorna Sass' "Great Vegetarian Cooking Under Pressure" and it's all about pressure cooking vegetarian dishes. I decided to make Whole Grain Tabbouleh Salad served with red leaf lettuce (page 178) and the split pea hummus (Page 213-214) with pita chips as the appitizer and Ratatouille Soup (page 54) as the main course. The only problem is that you need a pressure cooker for the exact times, but you could probably use regular cookware also.

I'm going to my boyfriend's aunt and uncle's and they are making a ham as the main dish. I am making one of those Pillsbury veggie pizzas to take. Everyone attending is to bring a dish to share. Almost everyone knows I'm a veggie, so there will be a few options for me to eat but I'm making that pizza and maybe one other side dish so I have more to chose from and not end up thinking reese eggs would make a good vegetarian meal substitute haha.
