My co-worker and I are trying to eat healthy, but we usually eat at our desks so big, elaborate lunches are not a good option. My co-worker eats tuna on crackers or salads, but she's sick of that. I've been brining in Smart Ones frozen dinners, but I'd rather have fresh stuff. Do you have any easy recipes to liven up our boring lunch routines?

I always eat lunch at my desk (lunch break? what's a lunch break?), and my favorite thing to bring is a veggie wrap made with:
- Hummus
- Tofu
- Green Pepper
- Cucumber (Lots!)
- Red Onion
- Alfalfa Sprouts
I agree about the wraps. I get whole wheat wraps and eat one every day. I fill them with a protein source (hummus, beans, leftover meat, or 2% milk cheese) and then load then up with every veggie I have fresh in my house and if it is a bit dry I use just a little bit of Newman's Own light dressing. The great thing is that it can be different every day depending on what you have on hand and it is so easy. I chop up veggies for the week and put them in baggies in the fridge and buy matchstick carrots at the store and then they only take a couple minutes to assemble.
healthy choice makes individual microwaveable soup bowls. they are like two cups of soup and only 150 cal! i usually have that with a light english muffin (the light ones have more fiber and protein than regular) with a tablespoon of peanut butter. fills me up, easy to make, and tasty!

On sunday night, chop up lettuce, toamtoes, and all thsoe filling. Grab some sliced meat (some ppl freeze them in weekly portions, then defrost on this night) and throw them int he fridge. every day buy some freash bread on the way to work, and make your own. You can also put leftovers in there (eg. chicken terryaki) and jsut heat that up, put it on the bun and put on your toppings. You can mix it up however you want. Eg. bring english muffins and toamto paste to make mini pizzas using mushrooms, capsicums, onion, reduced fat frankfuts/pepproni/leftover chicken breast etc. using wraps

In australia we have this product called bean cuisine. its like a nice version of baked beans. They use chickpeas in one, in a tomatoy sauce with capsicum. I'm sure you have a similar prodcut, or you could make your own. Then i putt it in a jaffle one day, or in a wrap, toasted, or jsut heated up on rice or a bed of vegggies.

Ooh, I always eat at my desk too, and I love to cook! I actually usually take sunday evenings to make food for the week- I make soups and "casseroles" and freeze individual portions, and all I have to do is pop them in the microwave at work for a yummy, healthy meal.
I also often take veggies and hummus, and some fruit and yogurt to work for lunch too, or even just for snacks. I'm a fan of pitas- I stuff them with lost of lettuce and tomatoes, a little hummus, some turkey, bean sprouts, and mushrooms, delightful! Also, Bird's Eye has stem in bag veggies- they are 2 serving bags of frozen veggies that you pop in the microwave for a few minutes and ta dah you have steamed veggies- sometimes I will take those and a microwave baked potatoe and a little cheese, stuff the potato full of veggies, top with some cheese, it's a great lunch!

broth based soups, especially in winter. (I'll nuke some onion, carrots, and celery and toss it into a can of soup.)
