I was a vegetarian for a little over a year 3 months ago, but went back to meat for...convenience I guess you could call it. I live at home, and it's hard to get a decent vegetarian dinner. My family all eat meat so I end up eating whatever veggies are being cooked or whatever I can scrounge up for myself.
Any suggestions for quick, easy vegetarian dinners? Preferably ones that don't have a lot of unusual ingredients. I'm still working with the basic groceries my mom gets at the store. Thanks!!
Well, I am not a vegetarian but I find myself eating meatless meals just out of convenience.
For something fast, I buy sweet potatoes, onions, canned corn and frozen spinach.
Corn: nuke in microwave 2 minutes I then add 1/4 cup mayo, 1/8 cup parmesean and then sprinkle with cayenne pepper. Doesn't sound as good as it is!
Spinach: cook over medium heat in pan, add garlic salt to eat.
Sweet Potatoes: cut in chunks with 1/2 an onion, nuke in microwave 5 minutes with butter. Add salt.
You can easily make two meals with this, it keeps well and it's healthy. It also fills you up!
Favourites are spicy veggie chillis made with canned beans, canned tomatoes and whatever vegetables are handy... served with rice. Very quick
Also vegetable curries using a tomato base, some diced potato, a little plain yoghurt to make them creamy and plenty of coriander (cilantro) chopped in at the end
Stir-fries are lovely... If you can get your hands on some firm tofu or quorn, cut into strips and marinade in a little soy sauce it works well with lots of shredded vegetables and a bed of noodles
Stuffed peppers.... mix some cooked rice with peas, seeds, herbs, sweetcorn or chopped green beans and use to stuff peppers which you then bake in the oven.
I'm going to make sure I get sweet potatoes for next week, and I think I'll try the stuffed peppers this weekend.
One of my favorite meals is vegetarian friendly - so long as you eat eggs and cheese (although you can cut either out). I steam zucchini until they are just cooked. Slice them together with a ripe tomato, a hard boiled egg, some grated cheese (I like strong cheeses like parmeasean or pecorino) and a touch of salt and oil. Total calories ranges depending on how much cheese and oil you use, but unless you go overboard it is a dinner under 300 calories.
Another favorite is homemade vegetable soup. You can store it for several days, It is hot, filling and very healthy. Try adding a teaspoon of olive oil to the bowl after it is heated.
