Easy and yummy breakfast muffin
I have been trying to do low carb and I am sick of eggs for breakfast. this is a recipe i found online that is delicious and fills me up! Not to mention very healthy!
* 1egg
* 1 1/2 teaspoons unbleached cane sugar
* 1 teaspoon cinnamon
* 2 teaspoons milk
* 1/2 teaspoon baking powder
* 3 tablespoons ground flax seeds
I bought a bag of flax seed at safeway and grind them in the coffee grinder- you could by already ground or flax meal maybe
Directions
1Spray a microwave safe bowl with cooking spray.
2.In the bowl, mix the egg and sugar until well combined, add the milk or yogurt and blend well.
3.Mix in the ground flax seed, cinnamon, and baking powder until well combined.
Microwave for 11⁄2 minutes.
I tweaked it by cutting in 1/2 ingredients and using a ramekin- i used about 2 tbs egg beaters, regular and brown sugar splenda, a few drops vanilla and spray butter on top- i made another with a couple slices banana smashed and it was awesome!
Not sure of the calories, but if you add up the ingredients, it is around 100 calories or so if you 1/2 the recipe.

sounds tasty! i wanted to make it as a snack, and i was wondering, since my microwave is really old and low on power (there's not even a low/high setting :S), how long should i put it to bake in my oven/toaster oven? (yes, i'm not a baker...;P).
also, is brown sugar an addequate alternative for unbleached cane sugar? thanks! :)
This is: Made from 100% unbleached bamboo/sugar cane pulp. Got that from a Google web site. Also, sugar is sugar, no matter how you process it. It's the flavor that changes. Things made with brown sugar tend to brown better.
Hey there, hope I'm not bursting your bubble about the calorie content of your recipe, but I threw it into the recipe analyzer just to see what the ratios of carbs/protein/fat would be because it looked like something I might want to try....and it came out to 213 calories for the whole thing.
I'm wondering if you actually meant three tablespoons of ground flax seed, or if that was supposed to be 3 teaspoons?? If its 3 teaspoons, then you're looking at 141 calories.

I am not sure about how long in a toaster over or conventional over- just experiment. I set the timer for 10 minutes @ 375 and keep checking. I did not use the real sugar however, to keep the calories and the GI low. I used half brown sugar splenda and half white splenda. You could also use stevia powder (very little- i use the size of a 1/2 a tic tac pr less in my coffee) The banana also added sweetness so you could cut out the white splenda. As far as the calories- 213 was what the original recipe post the at count, but since I am only making half (which is plenty to fill you up) and I am using lower calorie items (splenda, egg beaters) I figured it was around 100. I am going to try it today with fresh raspberries and a few sugar free chocolate chips- and maybe a little cool whip lite on top! BTW I am at my goal weight, but I am continuing the low GI because it not only helped me loose the 8 lbs that wouldn't budge, but my acne got so much better. Plus, I had this bag of fax seed I was never touching and I know how good it is for you!!
Oh yeah, and the amount of flax seed was right- but you could use less and cook it longer. When I first made this I just eyeballed the amounts. It was so quick and easy, you could play with different amounts and make several muffins and it won't take much time at all. That was why I liked it so much- it is something I can do in a hurry in the morning before work!!

I was on a ketogenic diet (extremely low-carb medical diet) for a seizure disorder & I made these ALL the time (though with Splenda or DaVinci's instead of sugar, obviously).
Because the nature of my diet required a high fat ratio, I used whole eggs & I also added sweetened cream cheese or ricotta in the middle which is AMAZING! You can use egg whites & fat free cream cheese (or cottage cheese) for the same effect.
Shredded coconut, cocoa powder, solid chocolate and lemon extract are delicious flavor variations
You can also pour the mixture like pancakes, but I think they only taste like pancakes if you're on a special low-carb medical diet & totally desperate for some freaking pancakes ;o)
freshbakedpi: i have a question about the cream cheese and ricotta you addred, did you mix it into the muffin mixture before you cooked it, or did you just put a dollop of it in the center and have a danish-like filling?
i can't wait to make this by the way, as soon as i buy flax seed, this is the first thing i'm going to cook because it sounds amazing.
I put the dollap in the middle because I like the danishesque aspect. So delicious! The cream cheese is especially delicious sweetened first with some lemon (or vanilla) extract. Mmm.
If you mix up the ricotta it turns out similar to a ricotta cake. Delicious!
thanks for this idea, i don't know if i'll be able to wait for the weekend to go shopping for the ingrediants, i might have to make a mid-week grocery run. hope i'm not hyping it up too much for myself.
